Instructions

    Drain the palmini noodles. Squeeze out some of the excess water from the noodles without crushing them.

    Preheat an Instant Pot on the Saute setting until it says HOT. Add in the olive oil and use a spoon to coat the pan. Add in the diced white onions and cook until the onions are translucent, about 30 seconds to one minute.

    Add in the tomato basil sauce and the water. Mix it well with a spoon. Taste, adding a pinch of salt if desired.

    Place the noodles into the pot and mix gently. Set the Instant Pot to the “keep warm” setting until the noodles are hot, about 5-7 minutes. Since the noodles started at room temperature they just need to be heated gently.
    5.
    Gently toss the noodles together with the cheese. Be sure to use a rennet-free cheese for this vegetarian dish. Serve immediately.
