Description

Imagine sinking your teeth into incredibly tender pork ribs, where the meat effortlessly falls off the bone. These ribs achieve that perfect balance of savory and sweet, with a delightful sticky glaze that caramelizes to perfection. First, the ribs are pressure-cooked until they reach that melt-in-your-mouth tenderness, ensuring a succulent texture in every bite.

The magic truly happens when they are generously basted with a flavorful marinade, inspired by Asian cuisine. This luscious sauce is a carefully crafted blend of rich, savory flavors balanced with a touch of sweetness. The salty notes play beautifully against the tangy zest, while a hint of earthy aroma adds depth and complexity.

As the ribs are repeatedly coated and placed under the broiler, the marinade transforms into a glossy, caramelized coating that is simply irresistible. The beauty of this recipe lies in its versatility. While the Asian-inspired marinade is a guaranteed success, you can easily adapt it to your own taste preferences.

A classic barbecue sauce would also work wonderfully, creating a more traditional flavor profile. These ribs are incredibly versatile and pair well with a variety of side dishes. Consider serving them with a refreshing slaw, a vibrant salad, or even a portion of cauliflower fried rice for a complete and satisfying meal.

They would also make a fantastic addition to any summer barbecue, offering a delectable alternative to the usual fare. After pressure cooking, simply baste them with your favorite marinade and finish them on the grill for a smoky, charred flavor that will impress your guests. These ribs are more than just a meal; they are an experience – a symphony of flavors and textures that will leave you craving more.

Whether you're hosting a casual get-together or simply looking for a delicious and satisfying dinner, these ribs are sure to be a hit.

Instructions

    1.
Sprinkle the ground ginger, garlic powder, salt, and pepper over the ribs. Use your hands to rub the seasoning and spices all over the meat. Please feel free to adjust spices and seasoning to suit your personal taste.
    2.
Place the trivet that comes with your instant pot in the base of the pot. Pour the apple cider vinegar and stock into the base of the instant pot. Arrange the seasoned ribs on top of the trivet. Place the lid securely on the instant pot and ensure it is set to sealing. Set the pressure to high and set the time for 30 minutes. After this time, do a quick release of the remaining pressure.
    3.
While the ribs are pressure cooking, add the lakanto, lime juice, sesame oil, olive oil, and tamari sauce to a small bowl. Whisk together well to combine. You may adjust the condiment ratios to suit your personal taste.
    4.
Once safe to do so, remove the instant pot lid. Preheat a broiler to high. Arrange the ribs across a grill tray. Brush the ribs all over with half of the prepared marinade. Place the ribs under the broiler for 5 minutes until golden.
    5.
Carefully remove the tray and baste the ribs with the remaining marinade. Return the tray to the broiler for a further 5 minutes. The ribs should be golden and caramelized and slightly charred in places. You may cook for longer if needed. Serve the ribs hot with your preferred Keto sides.
