Instructions

    Thinly slice the ginger into julienned pieces. Leaving the skin on is optional. Place the chicken and ginger into the Instant Pot. Add approximately 4 quarts of water. Set the Instant Pot to HIGH pressure and cook for 18 minutes.

    After 18 minutes, allow the pressure to release naturally due to the high liquid content to prevent sputtering during quick release. Remove the chicken breast from the soup and separate the meat from the bone.

    The chicken should separate from the bone very easily. Return the shredded chicken meat back into the Instant Pot.

    Serve the soup hot. Provide small dipping bowls with additional fish sauce and chopped Thai chilies on the side for those who enjoy extra heat and flavor.
