Description

Embrace the warmth of the season with these delightful spiced cookies. Perfectly suited for holiday celebrations or a cozy night in, these treats allow you to savor a sweet indulgence while keeping mindful of your dietary goals. Each cookie offers a symphony of familiar holiday flavors.

The aromatic spices dance with the sweetness of vanilla, evoking memories of crackling fireplaces and festive gatherings. The taste is comforting and balanced, creating a truly satisfying experience. The texture is equally enchanting.

Imagine sinking your teeth into a tender, buttery crumb that melts in your mouth. The edges offer a delicate crispness that gives way to a soft, chewy center. This contrast of textures adds complexity and makes each bite a pleasure.

These cookies are versatile and can be enjoyed in countless ways. Savor them as a simple yet elegant dessert, perfect on their own or alongside a cup of warm coffee or tea. The subtle sweetness and aromatic spices complement a variety of beverages, making them an ideal pairing.

For the best results, ensure your ingredients are fresh and of high quality. When preparing the dough, gentle handling is key to achieving that signature shortbread texture. Avoid overmixing, which can result in a tougher cookie.

Chilling the dough before baking also helps to prevent spreading and ensures a more tender crumb. When rolling out the dough, a light touch is essential. Use a smooth rolling pin and a lightly dusted surface to prevent sticking.

The thickness of the dough will affect the final texture of the cookies, so aim for a consistent thickness throughout. As the cookies bake, keep a close eye on them to prevent overbrowning. The edges should be golden brown, and the centers should be set but still slightly soft.

Once cooled, these cookies can be stored in an airtight container for several days, allowing you to enjoy the holiday spirit throughout the season. These cookies are more than just a treat; they are an invitation to slow down, savor the moment, and share the joy of the holidays with loved ones.

Instructions

    1.
Add room temperature butter to a stand mixer fitted with a paddle attachment. Blend the butter until it’s smooth and creamy. Then, blend your brown sugar substitute into the butter until you have a creamed, lump-free blend. At a low speed, blend the egg, vanilla extract, and liquid stevia into the mixer. Make sure the butter and egg blends back together so it doesn’t separate.
    2.
In a separate bowl, sift together almond flour, coconut flour, baking soda, tapioca flour, salt, cinnamon, ginger, and nutmeg. Add the dry ingredients to the wet ingredients in the stand mixer. Blend the ingredients together until you have a very sticky cookie dough. Transfer the dough to a piece of plastic wrap and wrap it tightly. Leave the dough to chill in your refrigerator for at least 1 hour.
    3.
After chilling the dough, prepare a surface to roll the dough out on with a Keto-friendly flour for dusting. Roll the dough to between ¼” and ½” thickness and use a cookie cutter to cut out 2” long cookies. You may use a standard shortbread cookie cutter or another similar round or rectangular cookie cutter. Transfer all cut cookies to a sheet tray lined with parchment paper.
    4.
Chill the tray of cookies in your refrigerator for 15 minutes. Meanwhile, preheat an oven to 350 degrees F. Bake the chilled cookies for 15 minutes or until done. The edges of the cookies should be golden, the centers will still be soft, and the cookies will naturally release from the parchment. The cookies need to cool completely before being decorated, which will take about 1 hour (this time is included in the recipe’s prep time).
