Description

Imagine crisp-tender green beans, their vibrant green color a promise of freshness. These aren't your average side dish; they're a flavor adventure, a delightful dance of textures and tastes that will awaken your palate. The beans are briefly cooked to retain their satisfying snap, then tossed in a zesty dressing that’s both bright and warming.

The heart of this dressing is a fragrant blend of lemon and a chili paste-infused oil, its subtle heat building with each bite, balanced by the lemon's refreshing tang. The citrus notes lift the earthy flavor of the beans, creating a harmonious blend that's both comforting and exciting. Each bean glistens, coated in the flavorful oil, promising a burst of deliciousness.

But the magic doesn't stop there. These green beans are then generously adorned with toasted almonds, adding a delightful crunch and nutty richness that complements the other flavors perfectly. The almonds provide a textural counterpoint to the slightly yielding beans, making each mouthful a celebration of contrasts.

Finally, a scattering of fresh, aromatic parsley adds a final flourish of color and herbaceousness, completing the dish with a touch of elegance and freshness. The parsley's bright, clean flavor cuts through the richness of the almonds and the subtle heat of the chili, adding another layer of complexity. These green beans are incredibly versatile, perfect as a side dish to accompany grilled chicken, pan-seared salmon, or roasted vegetables.

They can also be enjoyed as a light lunch or a vibrant addition to a salad. Their bold flavor and appealing texture make them a welcome addition to any meal, transforming a simple side dish into a culinary experience. They are a testament to the fact that simple ingredients, when combined with creativity and care, can create something truly extraordinary.

Enjoy these flavourful green beans warm or at room temperature, as their captivating taste will remain delightful regardless of the serving temperature.

Instructions

    1.
Add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender-crisp. Drain completely and immediately transfer to an ice bath to stop the cooking process. This will ensure they retain their vibrant green color.
    2.
Whilst the beans are cooking, add the sliced almonds to a dry skillet over low/medium heat. Toast for 3-4 minutes, stirring frequently, until lightly golden and fragrant. Watch carefully to prevent burning. Set aside.
    3.
In a small bowl, whisk together the harissa paste, 1 tablespoon of olive oil, lemon juice, salt, and pepper. Mix well to combine into a smooth and emulsified dressing. Taste and adjust seasonings as needed.
    4.
Heat the remaining oil in a large skillet over low heat. Thinly slice the garlic and sweat until tender and fragrant, being careful not to brown it. This will infuse the oil with garlic flavor without bitterness.
    5.
Add the drained green beans to the skillet with the garlic and toss to combine. Increase the heat to medium and add the harissa oil dressing. Toss the beans in the oil and stir-fry for a minute or two until heated through and well coated.
    6.
Transfer the spicy green beans to a serving dish. Top generously with the toasted sliced almonds and fresh parsley. Serve immediately and enjoy!
