Instructions

    Mince the garlic. Destem and quarter the mushrooms. Dice the zucchini into medium-sized pieces. Chop the bell pepper. Slice the bottoms from the Brussels sprouts and slice them thinly. Dice the ham as well. Heat a large nonstick saute pan over medium-high heat until hot. Add the avocado oil and swirl to coat the pan. Add the garlic and mushrooms and cook, stirring constantly, for 1-2 minutes.

    Add all the vegetables (excluding the ham) to the pan and sauté for 10-12 minutes, stirring occasionally to allow for some browning.

    Once the vegetables are nicely caramelized, add the ham and cook until heated through, about 3-4 minutes.

    Top the vegetables and ham with the cheese and reduce the heat to low. Allow the cheese to melt, covering the pan with a lid or sheet tray if needed to speed up the process. Serve immediately.
