    Microwave the cream cheese until softened. Add the softened cream cheese, 6 eggs, coconut flour, 2 teaspoons of Swerve, and xanthan gum together in a bowl.

    Blend the mixture with a stick blender until well combined and smooth.

    Preheat a medium-sized nonstick sauté pan over medium-high heat. Lightly grease the hot pan with a small amount of melted butter using a pastry brush.

    Pour ¼ cup of batter into the center of the hot pan at a time. Swirl the pan 3-4 times to spread the batter into a thin circle, covering any holes.

    Cook the crepe over the heat, reducing the heat slightly if it starts to smoke. Wait until the edges turn brown before using a heatproof spatula to loosen them. Flip the crepe when it's easy to lift the center with the spatula; if it tears, cook it for a few more seconds. Repeat with the remaining batter.

    While cooking the crepes, scramble 6 eggs and dice the ham. Preheat a small, nonstick skillet over medium-high heat. Add 1 teaspoon of avocado oil, then add the ham and sauté for 1-2 minutes until hot.

    Add the beaten eggs to the skillet with the ham and continually mix with a spatula to form soft curds. Turn off the heat as soon as the eggs are set but still slightly moist, as they will continue cooking off the heat.
