Description

These vibrant wraps offer a delightful and satisfying meal, perfect for a light lunch or a relaxed brunch. Imagine biting into the cool, crispness of lettuce leaves embracing a symphony of flavors and textures. The star of these wraps is the pan-fried halloumi, a cheese that boasts a wonderfully firm texture and a salty tang that sings on the palate.

As it fries, the halloumi develops a beautiful golden crust, adding a delightful textural contrast to the other ingredients. A homemade sweet chili sauce elevates the dish, providing a luscious balance of sweet heat, and fragrant spices. The sauce, crafted with apple cider vinegar, maple-flavored syrup, tamari, chili flakes, garlic, and ginger, creates a depth of flavor that is both complex and comforting.

Thinly sliced red onion contributes a sharp, pungent note that cuts through the richness of the cheese and avocado, while slices of creamy avocado provide a smooth, buttery counterpoint, adding healthy fats and a luxurious mouthfeel. The lettuce leaves offer a refreshing crispness that ties all the elements together, creating a harmonious and well-rounded dish. If halloumi isn't available, consider swapping it for queso fresco or paneer, both of which offer a similar frying quality and a mild, milky flavor.

Alternatively, for a softer, creamier experience, crumbled goat cheese would be a lovely addition. These wraps are not only delicious but also satisfying, keeping you feeling full and energized between meals. The combination of textures and flavors makes each bite a delight, while the fresh ingredients contribute to a vibrant and wholesome eating experience.

Instructions

    1.
Heat a dry skillet over a medium/high heat. Slice the halloumi into 4 even-sized pieces. Arrange the halloumi pieces in the hot skillet. Let the halloumi sit in the skillet for a few minutes on the first side until golden. Carefully turn the halloumi and pan-fry on the second side for a few minutes more until golden brown. Once cooked, set aside.
    2.
Thinly slice the onion. Heat the oil in the skillet and add the onion. Sweat gently over a low/medium heat for 4-5 minutes or until tender.
    3.
Clean the lettuce leaves and arrange on serving plates. Top each lettuce leaf with a slice of pan-fried halloumi. Divide the onion between each lettuce wrap, topping the halloumi.
    4.
Roughly dice the avocado. Drizzle the sweet chili sauce over the halloumi wraps. Top each wrap with diced avocado to serve.
