Description

Imagine sinking your teeth into a perfectly grilled pork chop, its surface boasting a beautiful sear that gives way to a tender, juicy interior. These pork chops, naturally lean, are elevated to a realm of exquisite flavor with a luscious, herbaceous compound butter. As the butter melts over the warm meat, it releases a symphony of aromatic herbs, infusing every bite with a rich, savory essence.

The combination is simply divine, a dance of textures and tastes that leaves you craving more. This dish is incredibly versatile. The pork chops themselves are substantial and satisfying, while the compound butter adds a layer of decadence that makes them feel special.

The herbaceous notes cut through the richness of the butter, ensuring a balanced and harmonious flavor profile. Feel free to experiment with your favorite herbs. Fresh thyme is a wonderful starting point, but don't hesitate to add parsley, dill, sage, rosemary, or any other herbs that inspire you.

Each herb will impart its own unique character to the butter, allowing you to customize the dish to your preferences. These pork chops are equally delicious served fresh off the grill or enjoyed as leftovers. If you find yourself with extra, consider incorporating them into a hearty hash, or slicing them thinly to create a satisfying sandwich.

The melted compound butter will have permeated the meat, making it incredibly flavorful even when cold. To create a complete and balanced meal, pair these grilled pork chops with a refreshing salad or a vibrant side dish of dark green vegetables. The slight bitterness of the greens will provide a pleasant contrast to the richness of the pork and butter.

Alternatively, a creamy cauliflower mash would be an excellent accompaniment, its subtle sweetness complementing the savory flavors of the main course. The possibilities are endless, allowing you to tailor the meal to your individual tastes and dietary needs. This simple yet elegant dish is a celebration of fresh ingredients and straightforward cooking techniques.

It's perfect for a casual weeknight dinner or a more formal gathering, and is sure to impress even the most discerning palate. The combination of tender pork, flavorful herbs, and rich butter is a timeless classic that will never go out of style.

Instructions

    1.
Preheat a grill until it is hot, around 400-450 F. While the grill is preheating, season the pork chops with the garlic powder and kosher salt on both sides.
    2.
Place them onto the grill and cook them for several minutes on the first side. Flip them to the other side and cook for another few minutes. Then flip them again but turn them 90 degrees to make a crosshatch pattern. Then repeat on the other side. The total cooking time should be around 5-7 minutes, depending on your grill. You will want to look for pork chops that are cooked through and have reached an internal temperature of at least 145 F.
    3.
While the pork chops are cooking, make the compound butter combining softened/room temperature butter, lemon zest and the fresh thyme leaves together. Add the kosher salt and mix well.
