Instructions

    In a microwave-safe bowl, combine 1/4 cup coconut butter, cacao powder, and chocolate chips. Heat on HIGH for 20 seconds, then stir. Continue heating in 10-second increments until melted and smooth. Stir in the Swerve sweetener.

    In another microwave-safe bowl, add 1/2 cup coconut butter and heat on HIGH for approximately 20 seconds, or until melted. Add food coloring (optional), mint extract, and Swerve sweetener. Stir well to combine.

    Place a very small drop of the chocolate mixture into each of 10 mini muffin liners. Freeze for 5 minutes to set.

    Divide the mint coconut mixture evenly among the 10 liners, placing it on top of the frozen chocolate base. Press down the mint layer until smooth and even. Freeze again for 5 minutes to set.

    Top each fat bomb with the remaining chocolate mixture, spreading it evenly to fill the top of each liner. Freeze until completely hard.

    Unwrap the fat bombs when you are ready to serve. Keep them stored in the fridge for a softer texture, or in the freezer for a firmer consistency. Enjoy!
