Description

Imagine starting your day with a delightful combination of savory flavors and satisfying textures, all conveniently nestled in a single, delicious cup. These hashbrown cups offer a creative twist on a classic breakfast favorite, transforming simple ingredients into an elegant and surprisingly easy-to-make dish. The base of each cup is crafted from finely riced cauliflower, creating a light yet sturdy foundation that perfectly mimics the texture of traditional hashbrowns without the added carbs.

The cauliflower is carefully pressed into muffin tins, forming individual nests ready to be filled with a delectable medley of ingredients. As they bake, the edges turn a beautiful golden brown, developing a subtle crispness that contrasts wonderfully with the tender interior. Each cup is generously filled with crispy, smoky bacon, its salty richness permeating every bite.

The bacon is complemented by a blanket of melted cheddar cheese, its sharp, tangy flavor melding seamlessly with the other components. The cheese stretches and bubbles in the oven, creating a gooey, irresistible topping that adds both flavor and visual appeal. To complete this culinary masterpiece, each cup is crowned with a perfectly cooked egg.

Whether you prefer a runny yolk that oozes over the other ingredients, creating a luscious sauce, or a more firmly set yolk for easy handling, the egg adds a creamy richness that elevates the entire dish. The combination of textures – the crispy cauliflower base, the chewy bacon, the melted cheese, and the soft egg – is a symphony of sensations that will delight your taste buds. While these hashbrown cups are incredibly convenient to reheat, they are truly at their best when enjoyed fresh from the oven.

The aroma alone is enough to awaken your senses and entice you to take that first, unforgettable bite. Feel free to experiment with different variations, adding your favorite herbs, spices, or vegetables to customize the flavor profile to your liking. These hashbrown cups are not just a meal; they are an experience – a celebration of simple ingredients transformed into something truly special.

Instructions

    1.
Preheat an oven to 350 degrees and prepare 6 regular-sized muffin tins with pan spray. In a mixing bowl, combine thawed and drained cauliflower rice, almond flour, parmesan, salt, pepper, and one egg. Drain any excess liquid.
    2.
Distribute the cauliflower hashbrown mix equally amongst the muffin tins. Press the mix into each tin, forming bowls with no holes in the bases. Bake for 10 minutes.
    3.
While the cups are baking, chop bacon into small cubes and cook until crispy. Spoon the bacon into the hashbrown cups after they come out of the oven, then sprinkle with shredded cheese.
    4.
Crack an egg over each hashbrown cup, letting some of the egg white settle first. Bake for another 25 minutes for over-medium eggs, or adjust baking time to your preference. Let cool for 5 minutes before removing from the muffin tins.
