Description

Imagine sinking your teeth into incredibly tender pork ribs, the meat practically melting off the bone. These Garlic Wine-Braised Pork Ribs offer just that – a deeply satisfying culinary experience that's surprisingly simple to create. The recipe begins with selecting succulent baby back ribs, known for their ideal balance of meat and bone.

A generous seasoning of salt and pepper prepares them for the searing process, where they develop a rich, golden-brown crust that locks in the flavorful juices. This initial searing not only enhances the visual appeal of the ribs but also contributes a delightful depth of flavor to the overall dish. The magic truly happens when the seared ribs are gently simmered in a bath of white wine and savory chicken stock.

The combination of these liquids creates a braising liquid that infuses the pork with moisture and complex flavors. As the ribs slow-cook in the oven, the wine and garlic work their wonders, tenderizing the meat to a remarkable degree. The low and slow cooking method is key to achieving that coveted fall-off-the-bone tenderness, transforming the ribs into a truly decadent treat.

The wine contributes a subtle acidity and fruity notes, while the garlic infuses the ribs with its pungent aroma and savory depth. The result is a symphony of flavors that dance on the palate. The aroma alone is enough to make your mouth water.

These ribs are incredibly versatile and pair beautifully with a variety of side dishes. Consider serving them with creamy mashed cauliflower for a comforting and complementary texture, or opt for a side of dark green vegetables like broccoli or spinach to add a touch of freshness and balance. This recipe is also ideal for preparing in advance, making it a convenient option for busy weeknights or weekend gatherings.

The flavors meld and deepen even further as the ribs rest, ensuring an even more delicious experience when reheated. While white wine is the classic choice for this dish, a light-colored blush wine can also be used to create a slightly different flavor profile. Whether you're a seasoned cook or a kitchen novice, these Garlic Wine-Braised Pork Ribs are sure to impress.

The combination of simple ingredients and straightforward techniques results in a dish that is both elegant and approachable.

Instructions

    1.
Preheat an oven to 350 F. Cut the baby back ribs into sections with three rib bones each. Preheat a 5-quart Dutch oven over medium heat until hot. Add avocado oil and swirl to coat the bottom. Place pork rib sections meat side down, layering if necessary with meatier bones on the bottom. Season with kosher salt and black pepper. Sear the first side for 4-5 minutes, reducing heat if smoking too much. Rotate ribs and sear the remaining sides for 4-5 minutes each.
    2.
Once all sides are seared, add whole garlic cloves on top of the pork. Smashing the garlic is optional.
    3.
Add wine and chicken stock to the pot. Cover and bake in the oven for one hour. Remove the cover and cook for another hour, or until the pork is tender and falling apart.
