Description

Imagine biting into a warm, satisfying loaf that defies expectations. This inspired French bread recipe is surprisingly easy to create at home, no special equipment needed. The result is a substantial baguette with a tender, almost pillowy interior encased in a beautifully golden crust, begging to be sliced and enjoyed.

This bread offers a delightful heartiness, making it ideal for those who appreciate a more robust texture. Its density allows for perfect slicing, holding its shape remarkably well. The flavor is subtly nutty and satisfyingly neutral, a blank canvas ready to be transformed by your favorite toppings and accompaniments.

Picture thick slices, toasted to a perfect crispness, the surface ideal for catching melted cheese that bubbles and browns under the heat. Or consider a vibrant bruschetta, the freshness of diced tomatoes mingling with the sharpness of garlic and the richness of extra virgin olive oil, all resting upon a sturdy slice of this homemade bread. The possibilities are truly endless.

Because baking can be an art and not a science, remember the nuances that can affect a finished loaf. This recipe calls for a coarser grind to achieve that authentic, dense bread texture and enhance moisture retention. This also contributes a pleasant graininess, reminiscent of traditional bread.

The texture is key to its versatility; it stands up beautifully to sauces and toppings without becoming soggy. Envision this bread as the foundation for delectable garlic bread, each slice slathered in a generous coating of garlic butter, then toasted to golden perfection. The aromatic garlic infuses every bite, creating a truly irresistible experience.

This bread also complements a hearty French onion soup. The hearty texture makes it a natural choice for dipping into savory soups and stews, soaking up every last drop of flavor. Toasting enhances its structure, preventing it from dissolving into the broth and provides textural contrast.

Instructions

    1.
Add the ground almonds, coconut flour, ground flaxseed, baking soda, erythritol, instant yeast, xanthan gum, and salt to a large mixing bowl. Mix the dry ingredients until well combined. You may omit or increase the quantity of sweetener as desired to suit your tastes or use your preferred low carb granulated sweetener. Please adjust your macros to account for any changes made.
    2.
Crack the egg into the mixing bowl. Add the apple cider vinegar and olive oil. Beat the wet and dry ingredients together well to combine. You should have a thick, crumbly consistency. Add the warm water to the bowl, drizzling in a little at a time and beating the mixture together as you go. Continue to add the water until a dough-like consistency has formed. Set the dough to one side to rest for 20 minutes.
    3.
Preheat the oven to 325 degrees Fahrenheit and line a shallow oven tray with baking paper. Knead the dough with your hands, forming into a ball. Turn the dough out onto the lined oven tray. Use your hands to mold the dough into a French baguette shape, roughly 3 inches wide and about 2.5 inches deep. Wet your hands with warm water and smooth the baguette all over, concealing any cracks.
    4.
Transfer the tray to the oven and bake for 40-45 minutes until cooked through and golden brown all over. The baguette should be soft and dense in the center and slightly risen all over. Set aside to cool. The baguette will provide 10 slices, perfect for toasting.
