Description

Imagine a bread that's both satisfying and nourishing, a wholesome loaf that fits seamlessly into your healthy lifestyle. This simple recipe creates a hearty bread, rich in fiber and plant-based goodness. Forget complicated kneading or specialized equipment; this bread comes together quickly and easily, offering a delightful alternative to traditional loaves.

The result is a deeply flavorful bread with a satisfyingly dense yet tender crumb. It's sturdy enough to hold your favorite sandwich fillings, yet soft enough to enjoy toasted with a smear of butter or a drizzle of honey. The subtle nutty notes of the flaxseed complement the other ingredients, creating a well-rounded, comforting flavor profile.

The texture is key to this bread's appeal. The use of ground flaxseed creates a slightly coarse, whole-grain feel that is both pleasant and texturally interesting. Each slice offers a satisfying chew, making it a truly enjoyable experience.

The ground flaxseeds also act as a binding agent, helping to create a cohesive and moist loaf. To achieve the perfect balance of flavor and moisture, this recipe incorporates a blend of ground almonds, coconut flour, and a generous portion of ground flaxseed. The addition of butter and yogurt contributes to the bread's overall richness and tenderness.

The aroma of this bread baking is simply irresistible, filling your kitchen with warm, comforting scents. Once cooled, it slices beautifully, revealing its wholesome texture and inviting color. Whether you're enjoying a simple slice with your morning coffee or creating a delicious sandwich for lunch, this bread is sure to become a staple in your kitchen.

Its versatility extends beyond sandwiches; try it as a base for avocado toast, grilled cheese, or even as a side to your favorite soup or salad. This bread offers a delightful way to enjoy a satisfying and nutritious treat any time of day. This loaf is a testament to the fact that healthy eating can be both easy and delicious.

Instructions

    1.
Add the ground flaxseed, ground almonds, coconut flour, baking soda, erythritol, and salt to a large mixing bowl. Stir together well to combine. You may use an alternative granulated or powdered low carb sweetener if desired, or omit the sweetener entirely.
    2.
Preheat the oven to 350 degrees Fahrenheit and line a loaf tin with baking paper. Add the melted butter, yogurt, almond milk, and lemon juice to the bowl with the dry ingredients. Mix everything together well to combine.
    3.
Crack the eggs into a separate mixing bowl. Whisk the eggs together vigorously for a few minutes until well combined and frothy. The eggs should be light and foamy and have increased in volume.
    4.
Pour the beaten eggs into the bowl with the low carb flour mixture. Beat the egg and dry ingredients together until thoroughly combined. The bread batter will be thick and slightly lumpy in consistency.
    5.
Spoon the low carb bread batter into the prepared loaf tin. Use the back of a spoon or a spatula to level the top of the batter to smooth and even. Transfer to the oven and bake for 50 minutes or until the flax bread is completely cooked through, golden brown all over, and a skewer comes out clean. Set the bread to one side to cool and firm. When ready to serve, slice the bread. You will get 12 slices from the loaf.
