Description

Imagine starting your day with something truly satisfying: small savory pancake bites, infused with a gentle warmth and cooked to a beautiful golden hue. These aren't your typical sweet pancakes; they are crafted for those who appreciate a more grounded and flavorful breakfast. Each bite offers a delightful combination of creamy richness and a subtle spicy kick that awakens the senses.

The texture is pleasingly soft and slightly chewy, creating a comforting experience with every mouthful. These savory pancakes begin with a base of eggs and cream cheese, creating a smooth and luscious batter. A touch of spice adds depth and complexity, while cooking them in a touch of oil ensures they achieve a perfectly crisp exterior.

The finishing touch is a sprinkle of cheddar cheese, which melts beautifully over the warm pancakes, adding a salty, savory note that complements the other flavors perfectly. To complete this delightful breakfast, a soft-boiled egg is served alongside. The jammy yolk of the egg provides a wonderful contrast to the savory pancakes, offering a creamy, rich dipping sauce that elevates the entire dish.

The combination of textures and flavors is simply divine. For those who prefer a milder flavor, the recipe can easily be adjusted by reducing or omitting the spice. A dollop of sour cream or mayonnaise can also be added for extra creaminess and to cool the palate if desired.

These additions enhance the richness of the dish while providing a refreshing balance. These savory pancake bites are not only delicious but also versatile. They can be enjoyed as a quick and satisfying breakfast, a flavorful brunch option, or even a light and satisfying snack.

Their unique flavor profile and pleasing texture make them a delightful treat any time of day. The recipe is easily adaptable to individual preferences, allowing you to customize the spice level and add your favorite toppings to create a truly personalized dish. Whether you're looking for a change from traditional sweet breakfasts or simply seeking a new and exciting flavor experience, these savory pancake bites are sure to please.

Instructions

    1.
To make the pancake batter, blend eggs, cold cream cheese, salt, garlic powder, and red pepper flakes in a food processor or good-quality blender. Blend until the batter is pale yellow, free of lumps, and frothy. You may need to scrape down the batter and blend two or three times to achieve this. Pour the batter into a pitcher, measuring cup, or some other tool for pouring the batter.
    2.
Choose a non-stick or cast-iron skillet to cook the pancakes. Melt 1 teaspoon of coconut oil in the skillet over medium heat. When the oil is hot, pour 6 servings of pancake bites in the oil, each about 1 tablespoon of batter. Then, sprinkle half teaspoon of shredded cheese over each potion. When the batter begins to cook, you can gently reshape any bites into circles as needed with a spatula. Let the bites cook on one side until they turn golden brown and naturally release from your pan.
    3.
Flip the pancake bites over and let them finish cooking on the other side until golden brown - about 60-90 seconds. Adjust your heat as necessary to avoid burning. Transfer the cooked pancake bites to a surface to cool and repeat Step 2 to cook the remaining batter. Once all the pancake bites are cooked, make a boiled egg by placing eggs with their shells in a pot and fill the pot with water until the eggs are covered. Bring the water to a boil on the stove.
    4.
Once the water and egg(s) are boiling, cook the eggs to your liking. For soft-boiled eggs, cook for about 4 minutes. For medium-done eggs, cook for 6 minutes, and hard-boiled eggs can be cooked for 10 minutes. Cool the boiled eggs in an ice bath until they are easy to handle. Peel the eggs and slice them in half. Each serving includes 6 pancake bites and half egg.
