Description

Imagine starting your day with a stack of warm, golden pancakes that deliver both satisfaction and lightness. This incredibly simple recipe transforms just a few key ingredients into a delightful breakfast experience, perfect for those mindful of their carbohydrate intake or anyone seeking a delicious and easy morning meal. The magic begins by combining the ingredients and allowing them to rest briefly.

This resting period is crucial, as it allows the psyllium husk powder to work its wonders, thickening the mixture and creating a batter that's surprisingly similar to traditional pancake batter. The result is a smooth, pourable consistency that promises a tender final product. When it's time to cook, keep the pancakes on the smaller side – about a tablespoon or two of batter per pancake.

This makes them easier to flip and ensures they cook evenly to a beautiful golden brown. As they cook, watch closely for the edges to set and the undersides to turn a rich, inviting color. With a gentle flip, you'll see them puff up slightly, a sign of the light and airy texture to come.

Resist the temptation to press down on the pancakes as they cook. Those tiny air bubbles are what give them their signature fluffiness. Instead, let them rise naturally, cooking until both sides are evenly browned and the centers are set.

Serve these pancakes with your favorite toppings. A dollop of lightly sweetened whipped cream adds a touch of indulgence, while fresh berries provide a burst of natural sweetness and vibrant color. A drizzle of sugar-free syrup can complete the experience, adding a familiar touch of sweetness without the unwanted sugar.

Experiment with different flavors to find your perfect combination. For a delightful twist, try adding a handful of dark chocolate chips to the batter just before cooking. As the pancakes cook, the chocolate melts slightly, creating pockets of rich, decadent flavor.

Alternatively, diced strawberries or whole blueberries can be added for a fruity and refreshing variation. No matter how you choose to customize them, these pancakes are sure to become a breakfast favorite, offering a guilt-free way to enjoy a classic morning treat.

Instructions

    1.
Whisk together the eggs, cottage cheese and psyllium husk powder. Allow the mixture to sit to the side for 5-10 minutes to let the powder thicken. Meanwhile, you can begin heating a large non-stick skillet over medium heat on your stove.
    2.
Add only 1 ½ t avocado oil to the skillet to melt and get hot. Add in the pancake batter using a 1 oz ladle or scoop. Cook on the first side for 2-3 minutes until the bottom is nice and browned and the pancakes are sturdy enough to flip. Flip the pancakes and cook for another minute or until cooked through.
    3.
Repeat with the remaining batter adding 1 ½ teaspoon of oil for each batch. In the meantime, you can whip cold heavy cream in a mixer until frothy. Add in the stevia drops and whip until it forms a stiff peak.
    4.
One serving of pancakes is 3, 1-oz pieces. Serve each set of 3 pancakes with a spoonful of whipped cream and ¼-cup of mixed berries. Mixed berries include blueberries, chopped strawberries, and raspberries.
