Description

These delightful gummies offer a comforting alternative when candy cravings strike. Simple to create, they deliver a burst of sweetness from fresh berries while incorporating beneficial fats. They’re the perfect guilt-free treat when you desire a touch of sweetness.

These gummies are easy to make, requiring minimal hands-on time, and simply need time to set up in the refrigerator. Raspberries and blueberries are gently cooked in a bit of water, transforming into a simple, concentrated fruit base. This fruit mixture is then simmered with a creamy plant-based milk, a sweetener of your choice, and a touch of oil to create a luscious, creamy fruit syrup.

The combination of berries and milk creates a smooth, velvety texture that coats the palate. Once the syrup is ready, it's swiftly whisked with powdered gelatin until smooth, ensuring the gummies achieve the perfect chewiness. The mixture is then carefully divided into individual molds, ready to set into their final, delightful form.

Feel free to experiment with other berries like strawberries instead of blueberries and raspberries to vary the flavor profile. The result is a soft, yielding gummy, bursting with the natural taste of berries and a hint of creaminess. The vibrant colors of the berries shine through, making them visually appealing as well.

These homemade gummies are a wonderful way to satisfy your sweet tooth without compromising your health goals. They are a delightful snack that you can enjoy any time of the day.

Instructions

    1.
Add the raspberries and blueberries to a small saucepan with three tablespoons of water. Bring to a boil over medium-high heat. Carefully mash the fruit with the back of a fork, breaking it down to a pulp as it bubbles for a minute.
    2.
Add the almond milk, coconut oil, and erythritol. Stir well to combine, melting the oil and mixing everything thoroughly. You may use your preferred low carb sweetener or Keto friendly plant based milk if desired. Be sure to adjust your macros for any changes.
    3.
Place a fine mesh sieve over a mixing bowl. Carefully pass the milky fruit mixture through the sieve. Gently press any pulp in the sieve down with the back of a spoon to ensure you have got all the liquid out. Discard the fruit pulp.
    4.
Sprinkle the powdered gelatin over the surface of the fruit liquid. Quickly whisk the gelatin powder and warm fruit liquid together thoroughly to ensure the gelatin is evenly distributed throughout the mixture and does not clump.
    5.
Select a silicone mold for your gummies. This recipe will create 30 gummies so you may need multiple molds. We have used individual chocolate molds as these are the perfect size for gummies. Carefully divide the fruit mixture evenly between the gummy molds.
    6.
Transfer the molds to the fridge to firm and set. This should take no longer than an hour. Once set, you can simply pop the gummies from their molds into an airtight container. Keep stored in the fridge until ready to eat.
