Description

Imagine sinking your teeth into tender, juicy chicken and succulent jumbo shrimp, infused with a vibrant Tex-Mex flair. This simple recipe brings the taste of the Southwest to your kitchen, perfect as a standalone meal or a component of a larger spread. The beauty of this dish lies in its versatility.

The chicken and shrimp are coated in a homemade blend of spices, crafted from common pantry ingredients. This means you can easily whip up a batch whenever the craving strikes. Baking the protein in the oven ensures that the chicken and shrimp remain incredibly moist and flavorful, eliminating the need for grilling and saving you precious time.

Once cooked, the possibilities are endless. Savor the chicken and shrimp as is, allowing the smoky, savory spices to shine through. Or, get creative with your favorite garnishes.

A dollop of creamy guacamole, a spoonful of tangy sour cream, or a drizzle of rich queso can elevate each bite. For those who enjoy a bit of heat, a sprinkle of extra cayenne pepper or crushed red pepper flakes in the seasoning mix will add a fiery kick. Thinly sliced jalapenos can also be served alongside the chicken and shrimp for an extra burst of flavor.

This recipe is also ideal for meal prepping. Pair it with a variety of side dishes to create balanced and satisfying lunches or dinners throughout the week. Consider a vibrant salad, offering a refreshing contrast to the rich flavors of the protein.

If you're looking for something heartier, add cheese and crisp lettuce to create a deconstructed bowl. This chicken and shrimp also works wonderfully as a topping for cheese chips, transforming them into a Tex-Mex-inspired indulgence. However you choose to serve it, this versatile recipe is sure to become a staple in your kitchen.

Instructions

    1.
Preheat an oven to 350 degrees and brush a seasoned sheet tray with olive oil. For this recipe, you’ll want to oil your cooking surface instead of adding oil straight to the meat. In a small dish, mix together the seasoned salt, pepper, onion powder, cumin, cayenne, paprika, garlic powder, and oregano. If you don’t want a spicy mix, you can omit the cayenne.
    2.
Pat your chicken breast dry and cut it into1 or 2-bite sized pieces. In a large mixing bowl, toss the pieces of chicken with about ¾ of the spice mix. Keep tossing until the chicken has picked up all the seasoning in the bowl. Arrange the chicken on the oiled tray and bake for 15 minutes. While the chicken is baking, you can prepare the shrimp.
    3.
Peel and devein the shrimp, and add them to the large mixing bowl. Toss the remaining fajita seasoning with the shrimp until the shrimp has picked up all the seasoning in the bowl. Once the chicken has finished cooking for 15 minutes, move the chicken to the outer edge of the tray. Add the seasoned shrimp to the center of the pan and bake for an additional 10 minutes. Serve the fajita chicken and shrimp hot or divide into meal prep containers.
