Description

This hearty stew offers a comforting and flavorful experience, perfect for a quick and satisfying meal. Ready in under an hour, it combines the richness of beef and the smoky notes of kielbasa in a medley of savory spices. The zucchini and tomatoes are gently simmered, retaining a pleasant texture that complements the tender meats.

Each spoonful delivers a delightful combination of textures and tastes. The beef and kielbasa provide a robust, meaty base, while the zucchini offers a slight bite and the tomatoes contribute a subtle sweetness. A sprinkle of melted cheddar cheese adds a creamy, comforting finish.

While the recipe provides a streamlined cooking time, the stew can be simmered longer to deepen its flavors. The longer it cooks, the more the spices meld with the meat and vegetables, creating a richer, more complex profile. If you prefer a softer zucchini, simply slice it thinner to accelerate the cooking process.

Alternatively, you can extend the simmering time while adding the tomatoes later to prevent them from becoming overly soft. This recipe is designed to be mild, allowing the natural flavors of the ingredients to shine through. However, for those who enjoy a touch of heat, there are several ways to customize the spice level.

Consider adding dried red pepper flakes, cayenne pepper, or hot paprika when cooking the meats. A minced jalapeno can also be incorporated for a deeper, more pronounced heat. For those who prefer to control the spice level individually, a dash of your favorite hot sauce can be added as a garnish.

This versatile stew is perfect as a quick lunch or a comforting dinner. Feel free to adjust the ingredients and cooking times to suit your personal preferences. Whether you prefer a chunkier or smoother texture, a milder or spicier flavor, this recipe provides a solid foundation for creating your ideal stew.

Instructions

    1.
Heat the olive oil in a wide pot over low heat. Slice the kielbasa into -inch thick slices and toss them in the oil. Add the ground beef into the pot and break it up with a large cooking spoon. Season the meats with salt, pepper, garlic powder, and onion powder. Turn the stove heat up to high and cook until the meats release their fats and gain a browned char.
    2.
Reduce the heat down to low and melt the butter in the pot. Once the butter is melted, pour in the first amount of beef broth. Cut the zucchini into -inch thick quarters and cut the tomatoes into halves or quarters as well. Add the veggies to the pot. Cover the pot with a lid and bring the broth to a simmer.
    3.
Let the pot simmer for at least 10 minutes or more. The longer you simmer, the softer your vegetables will become. After 10 minutes, you can pour in the final amount of beef broth. Let the pot simmer openly without the lid until the liquid reduces. Stir pot together to break up the softened tomatoes and combine the ingredients. Serve 1 cup of stew with tablespoon of shredded cheddar sprinkled on top.
