Description

Imagine succulent cubes of Indian cheese, transformed by a vibrant marinade of fragrant curry spices. This isn't just any cheese; it's paneer, known for its mild, milky flavor and firm, yet yielding texture that absorbs flavors beautifully. The marinade, a carefully balanced blend of turmeric, cumin, coriander, and garam masala, infuses each piece with warmth and depth, creating an aromatic symphony that awakens the senses.

A touch of ginger and garlic adds a subtle pungency, while a hint of chili provides a gentle warmth that lingers on the palate. The creamy element in the marinade, perhaps yogurt or a cashew paste, ensures the spices cling to the paneer, tenderizing it and creating a luscious coating that caramelizes beautifully when cooked. Threaded onto skewers, the paneer becomes an easy-to-manage and visually appealing dish.

The simplicity of the skewers belies the complexity of flavors within. As they cook, whether under the intense heat of a broiler or over the smoky flames of a barbecue, the spices release their full potential, filling the air with an irresistible aroma. The paneer itself becomes subtly golden, its edges slightly crisp, contrasting with the soft, yielding interior.

These paneer skewers are incredibly versatile. They can be served as an appetizer, a flavorful vegetarian main course, or even as a vibrant addition to a buffet. The mildness of the paneer and the balanced spicing make them appealing to a wide range of palates.

They are particularly delightful when paired with a refreshing side salad, the crispness of the greens and the light acidity of a vinaigrette cutting through the richness of the cheese and spices. A simple cucumber and tomato salad, dressed with lemon juice and cilantro, is an excellent complement. Alternatively, a more substantial salad with roasted vegetables or grilled halloumi can transform the skewers into a complete and satisfying meal.

Beyond a salad, consider serving these skewers with a side of fluffy basmati rice or warm naan bread, perfect for soaking up any remaining marinade. A dollop of cooling yogurt raita adds a touch of freshness and helps to balance the spices. For a more elaborate presentation, arrange the skewers on a platter with a selection of chutneys and pickles, allowing guests to customize their experience and explore different flavor combinations.

These marinated paneer skewers are a delightful culinary adventure, a testament to the transformative power of spices and the simple pleasure of perfectly cooked cheese.

Instructions

    1.
Soak 4 wooden skewers in water for 20 minutes.
    2.
Dice the paneer into 12 even-sized cubes. Peel the onion and slice into 8 even wedges. Add to a mixing bowl.
    3.
Add the olive oil, yogurt, tomato purée, dried herbs, spices, salt, and pepper to a mixing bowl. Stir well to combine.
    4.
Spoon the marinade over the cheese and onion. Use your hands to mix together, coating everything in the dressing. Set aside until the skewers are ready.
    5.
Divide the marinated mixture between the four skewers so that each kebab has 3 pieces of paneer and two onion wedges.
    6.
Heat a broiler to medium and arrange the skewers across a grill tray. Cook for 4 minutes each side or until cooked through and starting to caramelize around the edges.
