Instructions

    1.
    Cover four wooden kebab skewers with water to soak.

    Cut the cauliflower into florets and add to a pan of boiling water. Boil for 3 minutes until just tender, drain and submerge immediately in ice cold water to stop the cooking process. Drain, pat dry and add to a mixing bowl.

    Preheat the oven to 400 degrees Fahrenheit.

    Add the tomato pur ee, oil, curry powder, cumin, coriander, lemon juice, turmeric, salt and pepper to a mixing bowl. Mix together well to combine.
    5.
    Add the tomato mixture to the cauliflower. Use your hands to rub the marinade all over the cauliflower.
    6.
    Divide the cauliflower evenly between the four kebab skewers.
    7.
    Bake for 20-25 minutes until fork tender and the edges are starting to caramelize.
