Description

These chicken skewers offer a delightful balance of spice and zest, perfect for anyone who enjoys a dish with a bit of heat. Cubes of chicken, juicy and tender, are steeped in a rich marinade of savory oils and a medley of aromatic spices, allowing the flavors to penetrate deeply. The marinated chicken is then threaded onto skewers and roasted until perfectly cooked, boasting a slightly crisp exterior and a succulent interior.

The real star of this dish is the vibrant, homemade green sauce. This verdant concoction is a symphony of fresh herbs, tangy citrus, and the subtle heat of green chilies. Its bright and herbaceous flavor profile is beautifully tempered by a swirl of cool sour cream, creating a creamy and refreshing counterpoint to the spicy chicken.

The sauce is generously spooned over the roasted skewers, ensuring that every bite is an explosion of flavor and texture. These skewers are incredibly easy to prepare, requiring only a few minutes of hands-on time. Simply whisk together the marinade, coat the chicken, and let it rest.

The longer the chicken marinates, the more intense the flavor becomes, so plan accordingly. Once marinated, the skewers are quickly roasted in the oven or grilled to perfection. These spicy chicken skewers are fantastic for meal prepping.

After cooking, allow them to cool completely before storing them in the refrigerator. They will keep well for several days, making them an ideal option for a quick and easy lunch or dinner. The creamy green sauce can be reheated gently or served cold, depending on your preference.

These versatile skewers can be paired with a variety of sides. Serve them with sautéed vegetables or cauliflower rice for a light and healthy meal. Alternatively, use them as a flavorful filling for tacos or add them to meal bowls and salads for an extra boost of protein and spice.

For those sensitive to spice, you can easily adjust the heat level of the green sauce by reducing the amount of green chili used or omitting it altogether. A pinch of dried red pepper flakes can also be used for an alternative source of heat, allowing you to customize the dish to your personal preference.

Instructions

    1.
Cut chicken breasts into 2-inch pieces and place in a mixing bowl. Season with salt, pepper, onion powder, cumin, and parsley. Drizzle with olive oil and toss to coat evenly. Wrap in plastic wrap and marinate in the refrigerator for at least 4 hours (or longer for more flavor).
    2.
Combine cilantro, olive oil, lime juice, chopped jalapeno, salt, oregano, and minced garlic in a food processor. Pulse until you have a loose, fragrant marinade. Reserve the sour cream. Spoon a couple of spoonfuls of the verde sauce over the uncooked chicken, coating it lightly.
    3.
Preheat oven to 375 degrees. Thread the marinated chicken onto metal or pre-soaked wooden skewers (approximately 6 pieces per skewer). Place the skewers on a baking rack set over a sheet tray to catch drippings.
    4.
Cook the skewers in the preheated oven for about 40 minutes, rotating halfway through. The skewers are done when the chicken is cooked through and the verde sauce has caramelized slightly. The internal temperature should reach 165 degrees. While the chicken is cooking, add the sour cream to the remaining verde sauce in the food processor and blend until smooth and creamy. Spoon the creamy verde sauce over the hot chicken skewers to serve.
