Description

This delightful pasta salad is a refreshing and satisfying dish, ideal for warm weather or whenever you crave the taste of the sea. Tender shrimp, a versatile protein available year-round, mingles harmoniously with crisp, chopped celery, vibrant broccoli florets, and juicy tomatoes, creating a symphony of textures and flavors. Each bite offers a delightful crunch alongside the succulent shrimp.

The salad is coated in a luscious, creamy dressing, rich with the tang of lemon and a blend of carefully selected seasonings that complement the other ingredients without overpowering them. The dressing binds the elements together, ensuring every forkful is bursting with flavor. The bright acidity of the lemon cuts through the richness of the dressing, providing a refreshing counterpoint.

Chilling the salad before serving allows the flavors to meld and deepen, transforming it into an even more enjoyable experience. This makes it a perfect option for a light lunch, a revitalizing snack, or a nutritious meal to fuel your activities. Its make-ahead convenience also makes it excellent for meal prepping, allowing you to enjoy it throughout the week.

Stored properly in the refrigerator, it will maintain its freshness and flavor for several days. Serve this pasta salad as a standalone dish, or alongside grilled fish or your favorite protein for a complete and satisfying meal. Feel free to personalize it to your liking based on your taste preferences or what's fresh and available.

Consider adding sliced mushrooms for an earthy note, or incorporate other vegetables like cauliflower, green beans, zucchini, asparagus, spinach, or arugula for added nutrients and visual appeal. If you prefer a lighter dressing, you can substitute some of the mayonnaise with a drizzle of olive oil.

Instructions

    1.
Peel and devein the shrimp if needed. Toss with salt, pepper, onion powder, and garlic powder. Heat olive oil in a pan over medium-high heat. Cook the shrimp on one side until golden brown (90-120 seconds), then flip and cook for another 60 seconds, or until just done. Set aside to cool.
    2.
Dice celery, mince raw broccoli florets, and halve or quarter grape tomatoes. In a large mixing bowl, combine these ingredients with mayonnaise, lemon juice, salt, pepper, minced garlic, red pepper flakes, onion powder, and chopped green onions. Once the shrimp are cooled, chop them into bite-sized pieces and add to the bowl. Fold until coated in the mayonnaise and seasonings.
    3.
Prepare shirataki noodles by draining, rinsing, and boiling for 2-3 minutes (or according to package directions). Drain and add the cooked noodles to the mixing bowl. Gently fold the pasta into the bowl, being careful not to damage the noodles. Chill in the refrigerator for at least 1 hour before serving cold.
