    Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and line a baking sheet with parchment paper. Separate the egg, placing the white into the bowl of a stand mixer. Add the cream of tartar to the egg white. Whip the egg white and cream of tartar together on medium-high speed until stiff peaks form. Gently transfer the whipped egg white into a clean bowl and set aside.

    Thoroughly clean your mixing bowl. Add the egg yolk, cream cheese, and the first portion of stevia to the bowl. Using the stand mixer, whip these ingredients together until you achieve a smooth, pale yellow batter. Ensure there are no lumps and the mixture is well combined.

    Gently fold the whipped egg white into the egg yolk batter, taking care not to deflate the air bubbles in the egg white. Use a spatula to fold until just combined. Transfer the batter to a piping bag fitted with a large round tip, or a plastic ziploc bag with a corner cut off. Pipe approximately 10 puffs onto the prepared baking sheet, each about 2 inches (5 cm) wide, leaving space between each puff.

    Place the baking sheet with the piped puffs into the preheated oven. Bake for 10 minutes at 375 degrees Fahrenheit (190 degrees Celsius). Then, without opening the oven door, reduce the heat to 300 degrees Fahrenheit (150 degrees Celsius) and bake for an additional 15 minutes. The puffs are done when they are golden brown and easily lift off the parchment paper.
