Description

Imagine starting your day with a delightful combination of textures and flavors: creamy, softly scrambled eggs nestled in a crisp, savory cup. This recipe transforms ordinary scrambled eggs into an elegant and satisfying dish, perfect for a weekend brunch or a special breakfast. The star of these eggs is the creamy richness achieved by incorporating a generous amount of cream cheese.

As the eggs cook, the cream cheese melts into them, creating a velvety smooth texture and a subtle tang that elevates the flavor profile. Fresh chives, stirred in just before the eggs are finished, add a delicate oniony note and a pop of vibrant green color, enhancing both the taste and visual appeal. The contrast of the creamy eggs with the crispy prosciutto cups is what makes this dish truly exceptional.

Thin slices of prosciutto are baked until they transform into delicate, savory crisps that serve as edible bowls for the eggs. The salty, umami-rich prosciutto provides a delightful textural counterpoint to the soft, creamy eggs, creating a harmonious balance of flavors and textures in every bite. These prosciutto cups are incredibly easy to make, adding a touch of elegance with minimal effort.

They can be prepared ahead of time, making this recipe perfect for entertaining. To assemble, simply spoon the creamy chive scrambled eggs into the prosciutto cups and serve immediately. Garnish with extra fresh chives for a final touch of freshness and color.

The warmth of the eggs gently softens the prosciutto, melding the flavors together in a truly memorable way. Whether you're looking for a sophisticated brunch option or a simple yet elegant way to start your day, these creamy scrambled eggs in crispy prosciutto cups are sure to impress. The combination of rich, creamy eggs, fresh herbs, and salty prosciutto is a culinary delight that is both satisfying and refined.

Enjoy this delightful dish as a special treat or a regular part of your breakfast routine.

Instructions

    1.
Preheat the oven to 400 degrees Fahrenheit.
    2.
Arrange the prosciutto in the cups of a muffin tray so that it covers the base and the sides, forming four cup shapes. Bake for 7-8 minutes until hot and crisp.
    3.
Whilst the prosciutto is cooking, add the eggs to a mixing bowl with the salt and pepper and whisk to combine.
    4.
Heat the butter in a large pan over a medium heat and add the beaten egg, allowing it to settle in the pan and start cooking a little.
    5.
Add the cream cheese and chives to the pan on top of the egg.
    6.
Use a fork to mash the cheese into the egg and scramble the mixture. Cook the eggs to preference.
    7.
Divide the egg mixture evenly between the four cooked ham cups to serve.
