Instructions

    Preheat the oven to 250°F (120°C). Dice the Keto cornbread into 1-inch cubes. Spread the cubes on a baking sheet and bake for 45-60 minutes, or until they are dried out. Once dried, remove from the oven and increase the oven temperature to 350°F (175°C). Transfer the dried cornbread pieces to a large mixing bowl.

    Heat a large nonstick skillet over medium-high heat. Add olive oil and swirl to coat the pan. Add the minced garlic and stir for about 30 seconds until fragrant. Add the diced onion and celery and cook until softened and lightly browned, about 3-4 minutes, stirring occasionally. Season with salt and pepper.

    Pour the sautéed celery mixture over the dried cornbread pieces in the mixing bowl. Stir well to combine.

    In a separate bowl, whisk together the chicken bone broth and eggs. Pour the mixture over the cornbread and vegetable mixture.

    Add the herbs de Provence and another pinch of salt to the mixture. Stir well to ensure the herbs are evenly distributed.

    Pour the stuffing mixture into a prepared 8 ½” x 11” baking dish that has been sprayed with nonstick cooking spray.

    Place the stuffing in the oven and bake for 35-40 minutes, or until it is cooked through and the top is nicely browned. Serve immediately!
