Description

Imagine warm, pliable flatbreads, infused with the vibrant flavors of Indian cuisine. These golden-hued breads offer a delightful textural contrast, boasting a tender, almost soft interior and a satisfyingly firm exterior. They are a wonderful accompaniment to any meal, perfect for scooping up flavorful sauces or enjoying as a light snack.

The base of these flatbreads is crafted from coconut flour, lending a subtle sweetness and a unique, slightly nutty undertone. Finely shredded coconut adds further depth of flavor and contributes to the bread's delicate crumb. A touch of garlic powder provides a savory warmth, while turmeric infuses the dough with its characteristic earthy notes and a beautiful golden color.

Fresh cilantro, finely chopped, adds a burst of brightness and aromatic freshness, creating a harmonious balance of flavors. Ground flaxseed meal acts as a binder, helping to create a cohesive dough and contributing to the bread's overall structure. A pinch of xanthan gum further aids in binding, ensuring the flatbreads hold their shape perfectly during baking.

The beauty of these flatbreads lies in their versatility. Feel free to experiment with different spices and seasonings to create your own unique flavor profiles. A pinch of cumin, coriander, or even a touch of chili powder can add an extra layer of complexity.

Serve these flatbreads warm, either on their own or as part of a larger spread. They make a fantastic addition to a sharing board, perfect for dipping into cool yogurt-based dips or zesty salsas. Alternatively, pair them with rich and flavorful curries, allowing the bread to soak up all the delicious sauce.

The possibilities are endless, making these flatbreads a welcome addition to any table.

Instructions

    1.
Add the coconut flour, ground flaxseed, cilantro, salt, turmeric, garlic powder, xanthan gum, and desiccated coconut to a large mixing bowl. Mix together well until fully combined.
    2.
Add the olive oil and a little of the water to the bowl. Mix together with your hands, as you slowly add more water a little at a time, until a dough forms. Set to one side for ten minutes to allow the flour and flax to absorb all the liquid. If the dough feels a little dry and crumbly after this time, add a little more water until you have a soft and pliable dough.
    3.
Preheat the oven to 375 degrees Fahrenheit and line a large shallow oven tray with baking paper. Divide the dough into 4 even portions with your hands and roll into balls. Arrange the balls of dough across the baking parchment-lined tray and press each one down gently. Use your hands to shape each one into a circle roughly half an inch thick.
    4.
Transfer the tray to the oven and bake for 18-22 minutes. The bread should be firm on the outside, cooked through, and golden brown all over. Set aside to cool and firm further before serving.
