Description

Imagine a sweet cinnamon bread, its aroma filling your kitchen, promising a delightful treat. This recipe creates a bread that wonderfully marries the comforting textures of both cake and traditional bread. It’s simple enough to mix by hand, allowing you to connect with the ingredients as you create something special.

As it bakes, the bread transforms into a beautiful golden loaf, ready to be enjoyed whether still warm from the oven or cooled to room temperature. It’s equally at home as a comforting breakfast companion or a satisfying sweet treat to brighten your afternoon. The addition of melted butter and yogurt enriches the recipe, helping to bind the ingredients while infusing the bread with a tender, moist crumb.

For those avoiding dairy, coconut oil can be used in place of butter. Similarly, a coconut milk yogurt alternative will work, though the texture may shift slightly. The bread will still be delicious and maintain a lovely consistency.

This bread is incredibly versatile. Sliced warm, topped with a generous pat of butter, it's perfect for a simple snack or a comforting dessert after dinner. It also makes a terrific breakfast, enjoyed as is or lightly toasted.

Consider adding a dollop of your favorite nut butter and a sprinkle of fresh blueberries for an extra burst of flavor and freshness. Every bite offers a tender crumb, kissed with warm cinnamon and a gentle sweetness that satisfies without being overwhelming. It's a treat that feels both comforting and special, perfect for sharing or savoring all on your own.

Whether you're looking for a comforting breakfast, a satisfying snack, or a delightful dessert, this cinnamon bread is sure to please.

Instructions

    1.
Add the ground almonds, coconut flour, 1 heaped teaspoon of the ground cinnamon, baking soda, erythritol, and salt to a large mixing bowl. Mix together well to combine. You may use an alternative granulated low carb or powdered sweetener if desired, adjusting quantities to suit your personal taste.
    2.
Preheat the oven to 350 degrees Fahrenheit and line a loaf tin with baking paper. Add the melted butter, yogurt, lemon juice, and vanilla to the bowl with the dry ingredients. Stir everything together well to combine.
    3.
Crack the eggs into a separate mixing bowl. Whisk the eggs together vigorously for a few minutes until combined. The eggs should be light and frothy and have increased in volume.
    4.
Pour the beaten egg mixture into the bowl with the dry ingredients. Fold the egg and flour mixture together until well combined. The mixture will be thick and dense, similar to a muffin batter. Add the lakanto syrup to a small bowl with the remaining ground cinnamon. Stir together well to combine until smooth. Set aside.
    5.
Spoon 1/3 of the bread batter into the lined loaf tin. Use the back of a spoon or spatula to level the mixture so that it is smooth and even. Drizzle 1/3 of the cinnamon syrup randomly over the bread batter. Repeat this process with another 1/3 of batter and a 1/3 of syrup until you have used up all the bread mixture, and the loaf is drizzled with a final layer of syrup. Transfer the loaf to the oven to bake for 50 minutes or until completely cooked through, golden brown, and a skewer comes out clean.
    6.
Set the bread aside to cool and firm little. You may serve the loaf slightly warm if you wish. When ready to serve, slice the cinnamon bread. You will get 12 slices from this low carb loaf.
