Instructions

    Finely dice the onion and crush the garlic. Add the cranberries, onion, garlic, orange juice, rosemary, vinegar, water, salt, pepper and syrup to a small saucepan. Bring the mixture up to a boil.

    Reduce to a simmer and stir well. Simmer for 15 minutes, stirring often and crushing the cranberries as you go. Cook until the liquid has reduced right down, and you have a thick jam-like consistency. If the mixture looks a little dry, you may add more water as needed.

    Just before the dressing has finished cooking, you can prepare the steaks. Heat a skillet over a medium/high heat. While the skillet is heating, rub the steaks in olive oil and season on both sides with salt and pepper. Place the steaks in the hot skillet and cook for 2-3 minutes each side for medium-rare or cook through to your preference. Set the steaks aside to rest for a few minutes, then top each with cranberry relish to serve.
