Instructions

    Roughly chop the pecans, walnuts and almonds. Add the chopped nuts to a mixing bowl along with the pumpkin seeds. Stir together well to combine, mixing the nuts and seeds.

    Melt the coconut oil. Add the melted coconut oil to the bowl with the nuts and seeds. Add the ground ginger, orange extract and erythritol. Stir everything together well to combine, coating the nuts and seeds in the flavorings. You may substitute the erythritol for your preference in low carb sweetener if desired, just be sure to adjust your macros to reflect any changes.

    Preheat the oven to 300 degrees Fahrenheit and line a shallow oven tray with baking paper. Tip the prepared granola mixture out onto the lined oven tray. Spread the granola mixture evenly across the tray in a single layer; this will ensure an even bake of the granola.

    Transfer the tray to the oven. Bake the granola for 30-35 minutes, turning halfway through. After this time, the granola should be toasted and lightly golden all over. It is best to keep an eye on the granola whilst cooking to ensure it does not burn, as this will result in a bitter-tasting cereal.

    Remove the cooked granola from the oven and set aside to cool completely. Once cooled, break any large clusters of granola up into smaller, bite-sized chunks. Add the cooled granola to a large bowl. Add the dried cranberries and chocolate chips. It is crucial the granola is cooled before adding the chocolate otherwise it will melt. Store the granola in an airtight container until ready to serve.
