Description

Imagine a delightful bowl of miniature chocolate cookies, each one offering a satisfying crunch and a burst of rich cocoa flavor. This reimagined cereal experience delivers the comforting sweetness you crave, without the guilt. These aren't just any cookies; they are carefully crafted to be the perfect bite-sized treat for any occasion, whether it's a quick breakfast or a satisfying snack.

The texture is key: a delicate crispness that gives way to a melt-in-your-mouth sensation, making each spoonful an adventure. The deep chocolate notes, achieved with a special cocoa, provide a luxurious and decadent taste that will tantalize your taste buds. Each piece is a testament to the idea that you don't have to sacrifice flavor when seeking a more mindful way of eating.

These miniature cookies are incredibly versatile. While perfectly enjoyable on their own, they truly shine when paired with your favorite milk or cream alternative. The cookies absorb just enough of the liquid to soften slightly, creating a harmonious blend of textures and flavors in every bite.

For an extra touch of indulgence, consider adding a sprinkle of unsweetened shredded coconut or a handful of your favorite chopped nuts. Feel free to get creative with the shape of your cookies! While the recipe is optimized for small, round shapes, you can easily adapt it to other cookie-cutter designs of similar size.

This allows you to personalize your cereal to match your mood or celebrate special occasions. The possibilities are endless, so let your imagination run wild and create a truly unique and delicious experience. Whether you're looking for a way to satisfy your sweet tooth or simply seeking a more wholesome alternative to traditional cereals, this chocolate cookie cereal is sure to become a new favorite.

It's a delightful reminder that you can enjoy the simple pleasures of life without compromising your health and well-being. So go ahead, pour yourself a bowl and savor the moment.

Instructions

    1.
Preheat an oven to 350 F. Combine the almond flour, whey, cocoa powder, sea salt, xanthan gum, baking powder, and powdered sweetener in a medium sized mixing bowl.
    2.
Add in one stick of melted butter and one egg. Mix with a rubber spatula until well combined. Feel free to use your hands to knead the dough as well.
    3.
Place the chocolate dough in between two parchment paper pieces and roll the dough to a ⅓” thickness. The dough should not need to be chilled.
    4.
Using a 1” round cookie cutter, cut out round cookies and place them on a baking sheet. Bake for 15-16 minutes until the cookies are well baked.
    5.
Allow them to cool sufficiently before removing them from the baking sheet. Transfer them to an airtight container where they can keep for up to one week.
