Description

Imagine sinking your fork into a warm, comforting skillet filled with savory goodness. This recipe transforms simple ingredients into a flavorful and satisfying dish, perfect for a quick weeknight meal or a hearty lunch. At its heart is tender, diced barbecue chicken, its smoky-sweet flavor infusing every bite.

The chicken, pre-cooked and ready to go, significantly cuts down on prep time, making this a convenient option for busy individuals. The chicken is gently sauteed with vibrant, leafy kale in a delicate olive oil base. The kale, as it cooks, wilts slightly, becoming tender and absorbing the rich flavors of the barbecue chicken and the subtle earthiness of the olive oil.

The combination of textures – the soft chicken and slightly chewy kale – creates a delightful contrast that keeps each mouthful interesting. The vibrant green of the kale also adds a visual appeal to the dish, making it as pleasing to the eye as it is to the palate. But the magic doesn't stop there.

The entire mixture is then crowned with a generous layer of melted Mexican cheese. As the cheese melts, it blankets the chicken and kale, creating a gooey, irresistible topping. The cheese not only adds a creamy richness to the dish but also a tangy sharpness that perfectly complements the sweetness of the barbecue sauce and the mild bitterness of the kale.

The melted cheese forms a delicious crust that crisps slightly around the edges, adding yet another textural element to the dish. The combination of smoky chicken, earthy kale, and melted cheese creates a symphony of flavors and textures that will leave you feeling satisfied and content. This skillet is more than just a meal; it's an experience.

It’s a warm hug on a plate, a burst of flavor in every bite, and a celebration of simple ingredients transformed into something truly special. Serve it straight from the skillet for a rustic presentation, and watch as it disappears in minutes.

Instructions

    1.
Cut chicken breasts in half horizontally. Place in a ziploc bag with BBQ sauce, massage well, and marinate overnight or for at least 30 minutes. Alternatively, cook the chicken ahead of time.
    2.
Preheat a grill to 450-500 F. Grill chicken breasts on a diagonal for 3-5 minutes until they release easily from the grill and have a good sear.
    3.
Flip and grill for 1-2 minutes on a diagonal. Flip again, placing on a diagonal in the opposite direction for a crosshatch pattern. Cook until the internal temperature reaches 165 F. Let rest on a cutting board.
    4.
Dice the cooked chicken into small pieces. Preheat a large nonstick skillet over medium-high heat. Add avocado oil, then add the diced chicken and sear for 1-2 minutes until lightly browned. Reduce heat if necessary.
    5.
Add kale to the skillet with the chicken and cook until the kale is wilted.
    6.
Top with shredded Mexican cheese and allow it to melt. Turn off the heat and serve immediately.
