Description

Imagine a dish that transforms the humble leek into a star. This baked leek recipe achieves just that, turning a simple vegetable into an elegant and flavorful side dish, perfect for elevating any meal. The leeks, carefully cleaned and prepared, become meltingly tender as they bake, their mild, oniony sweetness mellowing and deepening in flavor.

What truly sets this dish apart is the luscious sauce that blankets the leeks. A creamy blend of crumbled feta and freshly grated parmesan creates a tangy, salty, and umami-rich coating that perfectly complements the delicate leek flavor. The sauce, generously applied, seeps into every crevice of the leeks, ensuring each bite is an explosion of taste and texture.

As the dish bakes, the sauce transforms, bubbling and bronzing to a glorious golden hue, promising a delightful crispy top layer. Serving these baked leeks is a treat for the senses. The aroma alone is enough to whet the appetite, a blend of sweet leeks, savory cheese, and a hint of toasted garlic.

The visual appeal is undeniable – the vibrant green leeks contrasting beautifully with the golden-brown, bubbly cheese sauce. But the true magic happens with the first bite. The tender, almost buttery texture of the leeks gives way to the creamy, salty, and slightly tangy sauce, creating a symphony of flavors that dance on the palate.

The subtle sharpness of the feta cuts through the richness of the parmesan, preventing the dish from becoming too heavy, while a touch of freshly ground black pepper adds a hint of spice and warmth. This baked leek dish is an excellent accompaniment to roasted meats, adding a touch of elegance and sophistication to a classic Sunday lunch. It also pairs well with grilled chicken, pan-seared fish, or even as a vegetarian main course served alongside a hearty grain like quinoa or farro.

Whether you're looking for a simple yet impressive side dish or a flavorful vegetarian option, these baked leeks are sure to delight.

Instructions

    1.
Preheat the oven to 400 degrees Fahrenheit.
    2.
Slice the leek into 3 even segments discarding the outer leaves and the tough base. Slice each segment in half lengthwise. Arrange the sliced leek halves tightly into a small oven proof dish. Dot with half the butter and transfer to the oven to bake for 10 minutes until just tender.
    3.
Whilst the leeks are baking, melt the remaining butter in a small saucepan over a low/medium heat then add the cream cheese. Stir to combine until melted together.
    4.
Add the cream, crumble in the feta and sprinkle in half the parmesan. Bring to a simmer and stir to combine. Cook gently until hot through, the cheese has melted and the sauce is thick and creamy.
    5.
Pour the sauce over the part cooked leeks and sprinkle over the remaining parmesan. Return to the oven to bake for a further 12-15 minutes or until bubbling and golden on top.
