Instructions

    Preheat an oven to 375 degrees Fahrenheit. In a large bowl, combine the ground beef, salt, pepper, paprika, mustard powder, parmesan cheese, and egg yolk. Mix thoroughly by hand or with a spoon until well combined.

    Spray a 9-inch pie tin with non-stick cooking spray (a regular loaf pan will also work). Press half of the meatloaf mixture into the pan, shaping it like a pie crust with a shallow center and slightly higher edges.

    Arrange 3 slices of American cheese (or mild cheddar) in the center of the meatloaf base. Add sliced yellow onions and round pickle slices on top of the cheese.

    Place the remaining 3 slices of cheese over the onions and pickles. Press the remaining meatloaf mixture over the top of the filling, sealing the edges tightly around the circumference to enclose the filling completely. You can flatten the remaining meat mixture into a disc before placing it on top.

    In a small bowl, mix together the mayonnaise and ketchup. Spread this sauce evenly over the entire exposed surface of the cheeseburger meatloaf. This helps to seal in the filling and adds flavor. Bake the loaf, uncovered, for 45 minutes.
