Description

This turkey meatloaf transforms a familiar comfort food into a surprisingly light and flavorful dish. Ground turkey serves as a fantastic alternative to beef, offering a leaner profile without sacrificing any of the satisfying heartiness you crave in a meatloaf. The result is a moist and tender loaf that’s perfect for a weeknight dinner or a casual weekend gathering.

What truly elevates this meatloaf is the delightful surprise hidden within. A generous pocket of melted cheese creates a gooey, decadent center that oozes out with each slice, adding a rich and creamy dimension to the savory turkey. The cheese melts into the meat creating pockets of pure deliciousness.

It's a textural and flavorful contrast that will have everyone reaching for seconds. To complement the savory meat and cheese, the meatloaf is crowned with a layer of baked marinara sauce. As it bakes, the sauce thickens and intensifies, its vibrant tomato flavor infusing the meatloaf with a touch of sweetness and acidity.

The warmth of the oven coaxes out the natural sugars in the tomatoes, creating a caramelized glaze that is both visually appealing and incredibly delicious. The baked marinara topping provides a counterpoint to the richness of the meat and cheese, creating a harmonious balance of flavors. Each slice of this turkey meatloaf offers a symphony of textures and tastes.

The tender, juicy turkey, the molten cheese, and the tangy marinara sauce combine to create a comforting and satisfying meal that is both wholesome and indulgent. Serve it with a side of roasted vegetables, mashed potatoes, or a simple salad for a complete and balanced dish. This meatloaf is sure to become a family favorite.

    1 cup, shredded

Instructions

    1.
Preheat an oven to 375 degrees. In a bowl, combine the ground turkey with the shredded parm, salt, pepper, onion powder, garlic powder, paprika, mustard powder, and fresh chopped parsley (you can use dried if you don have fresh on hand, but fresh tastes better).
    2.
Lightly spray a loaf pan or rectangular baking dish. Press half the ground tukey mix into the pan, creating a pocket in the middle. Load the pocket in the center of the loaf with the first amount of shredded mozzarella.
    3.
Press the second amount of ground turkey over the bottom half of the loaf, making sure to seal the edges so the cheese doesn squeeze out during baking. Spread the marina sauce over the top of the loaf, and sprinkle about 2 TB of additional mozzarella over the top.
    4.
Bake the meatloaf for about 60 minutes, or until a meat thermometer reads at least 165 degrees fahrenheit.
    5.
Allow the meatloaf to cool for 5 minutes before slicing into 6 slices. Enjoy!
