    Preheat oven to 350°F (175°C). In a medium mixing bowl, combine all dry ingredients for the cake.

    Melt butter in a microwave-safe bowl in 30-second intervals until melted. Stir in vanilla. Add the melted butter mixture to the dry ingredients, mix slightly, then add the eggs (mix lightly). Pour in the hot, strongly brewed coffee and combine.

    Cut a piece of parchment paper into a square, fold it into a triangle, and continue folding to create a thin triangular piece. Measure against the round cake pan by placing the tip in the center. Cut to size, unfold to form a circle, and place in the bottom of the pan. Lightly spray the paper with cooking spray.

    Pour batter evenly into three 6-inch cake pans.

Gradually add 2 cups of Swerve icing sugar, whipping for 5 minutes and scraping down the sides as needed, until light and fluffy. Set aside at room temperature to maintain spreadability.
