Instructions

    Preheat the oven to 400 degrees Fahrenheit. Cut the cauliflower across the width, creating 1/2 inch thick slices. Cut these slices in half lengthwise. Select a medium oven-proof dish. Sprinkle the salt and pepper over the cauliflower and drizzle over the olive oil. Rub the oil and seasonings all over the cauliflower pieces. Arrange the sliced cauliflower pieces in the base of the oven-proof dish. Transfer to the oven to bake for 20-22 minutes or until just fork-tender.

    Spoon the passata (tomato sauce) over the cauliflower in an even layer. Scatter the grated mozzarella cheese over the top of the passata. You could use grated cheddar or fresh mozzarella slices if preferred. Be sure to adjust your macros if making any changes.

    Thinly slice the bell pepper into strips, discarding any seeds. Slice the olives in half. Sprinkle the dried oregano over the mozzarella layer. Arrange the sliced bell pepper and olives over the top. Place the pepperoni slices on top of the pizza bake.
    4.
    Return the bake to the oven and cook for a further 12-15 minutes. After this time, the bake should be piping hot through, the cauliflower tender, and the cheese golden and bubbling. Scatter with chopped fresh basil. Slice the pizza bake into quarters and serve with your favorite Keto sides.
