Instructions

    Chop a head of cauliflower into florets and place them in a food processor. Blend until you have very fine cauliflower rice.

    Place the cauliflower rice in a microwave-safe bowl and microwave for 1 ½ - 2 minutes. Let the cauliflower cool until it’s easy to handle.

    Preheat an oven to 450 degrees and line a quarter sheet pan with parchment paper. Place the cauliflower rice in a cheesecloth or thin dish towel and squeeze out as much liquid as possible. Return the liquid-free cauliflower rice to a mixing bowl.

    Stir the salt, garlic powder, Italian seasoning, egg, and Parmesan cheese into the cauliflower. Then, press the mixture into the prepared sheet tray. Make sure the mixture fills all four corners of the tray and press it down firmly.
    5.
    Bake the tray for 12 minutes. Then, sprinkle the cheddar and mozzarella cheese over the top of the cauliflower, covering all edges.
    6.
    Bake for an additional 5 minutes, until the cheese is melted and bubbly. Allow the garlic bread to cool slightly before slicing it into 12 rectangular pieces and serving.
