Description

These golden cauliflower croquettes are a symphony of textures and tastes, transforming humble cauliflower into an elegant and satisfying treat. Imagine biting into a crisp, golden-brown exterior that yields to a soft, savory interior. The cauliflower, cooked to tender perfection, forms the heart of each croquette, offering a delicate, slightly sweet base that is anything but bland.

Infused throughout is the rich, nutty flavor of aged Parmesan cheese, its crystalline texture adding delightful bursts of salty umami. Streaks of smoky bacon are mixed in, their savory intensity complementing the mellow cauliflower and sharp cheese, creating a harmonious balance of flavors that dance on the palate. Freshly snipped chives contribute a subtle, oniony brightness, their vibrant green flecks adding visual appeal and a refreshing counterpoint to the richness of the other ingredients.

Each croquette is a miniature masterpiece, carefully crafted to ensure a consistent texture and flavor in every bite. Whether served as a light snack to ward off afternoon hunger or arranged artfully on a platter as an appetizer, these cauliflower croquettes are sure to impress. They are equally at home alongside a simple salad for a light lunch or as a sophisticated side dish to accompany a grilled protein.

Their versatility makes them a welcome addition to any meal. The beauty of these croquettes lies not only in their taste and texture but also in their ability to elevate a simple vegetable into something truly special. They are a testament to the transformative power of good ingredients and thoughtful preparation.

Serve them warm, allowing the aromas to fully awaken, and watch as they disappear, one golden bite at a time. A creamy aioli or a tangy dipping sauce can further enhance the experience, adding another layer of flavor and complexity. These cauliflower croquettes are more than just a snack; they are an invitation to savor the simple pleasures of good food.

Instructions

    1.
Add the cauliflower rice to a small pan. Add a tablespoon of water and cook gently for a minute or two until the rice is just tender. Leave aside to cool for a moment then drain away any excess liquid.
    2.
Heat the olive oil in a skillet over a medium heat and add the bacon, cooking until crisp and golden. Set aside to cool.
    3.
Preheat the oven to 400 Fahrenheit and grease a shallow oven tray with a little oil.
    4.
Mince the garlic and finely dice the onion. Add to the pan with the bacon grease and sweat gently until tender. Allow to cool a little.
    5.
Add the cauliflower rice to a mixing bowl along with the ground almonds, lemon zest, parmesan, onion and garlic. Finely chop the chives into the bowl and crumble in the bacon. Season to taste and stir well to combine.
    6.
Add the egg and mix well.
    7.
Divide the mixture into 12 even portions and form into croquettes.
    8.
Arrange across the greased oven tray and transfer to the oven to bake for 15 minutes until golden brown all over and cooked through.
