    Combine the first amount of almond flour and salt in a stand mixer with a paddle attachment. Cut the 3 TB of butter into cubes and mix into the almond flour until broken up into 1-inch chunks or flakes. Avoid overmixing.

    Mix in the egg. Slowly pour in the cold almond milk while the mixer is on until the dough just comes together. The dough will be very sticky and may not need all the almond milk.

    Scoop the tart dough into plastic wrap. Flatten into a disk and refrigerate to cool and solidify. For a quicker process, freeze for 10-15 minutes, but avoid freezing completely. Meanwhile, combine the ricotta, shredded mozzarella, the second amount of butter, and almond milk in a metal or glass bowl.

    Set the bowl over a small pot of boiling water to create a double-boiler. Cook the ingredients, stirring with a whisk, until melted and combined into a uniform liquid.

    Add the remaining almond flour, stevia, salt, and egg. Continually whisk over medium heat until the liquid thickens into a custard-like sauce. Set aside to cool, refrigerating if desired.

    Line a 9-inch pie or tart pan with parchment paper. Spread the cold dough in the pan using your hands, dusting with all-purpose flour if needed. Create a thicker crust around the edges (about "-inch high). Use a fork to poke ventilation holes in the bottom of the dough.

    Freeze the dough-lined pan. Preheat the oven to 425 degrees. Once frozen, arrange aluminum foil in the center, leaving the edges exposed. Place dry beans or rice on top of the foil. Bake the tart dough for 15 minutes.

    After 15 minutes, remove the foil and beans/rice. Pour the cooled cheese filling into the crust, being careful not to overflow.
