Description

Delicate basa fillets, steamed until flaky and tender, form the heart of this simple yet stunning dish. The fish is transformed into a symphony of flavors with a vibrant topping of freshly sliced ginger, crisp scallions, and fragrant cilantro. These aromatics are briefly kissed by hot oil, releasing their essential oils and creating an intoxicating aroma that fills the kitchen.

This infused oil is then artfully blended with the savory depth of soy sauce and the nutty richness of sesame oil, creating a sauce that is both complex and comforting. While the ingredient list is modest, the resulting flavor is anything but. The gentle steaming process preserves the fish's natural moisture and delicate texture, allowing it to absorb the nuanced flavors of the ginger, scallions, and cilantro.

The hot oil adds a subtle hint of smokiness and intensifies the aromatics, while the soy sauce and sesame oil provide a balanced umami and nutty finish. This dish is a celebration of simplicity and fresh ingredients. It’s perfect for a quick and healthy weeknight meal, utilizing pantry staples and requiring minimal effort.

Feel free to adapt the recipe to your liking by substituting any mild, white fish such as cod, tilapia, or flounder. The steaming method ensures that the fish remains moist and tender, regardless of the variety you choose. For an added layer of complexity, consider adding rehydrated, julienned shiitake mushrooms to the topping.

These dried mushrooms boast an intense, earthy flavor that pairs beautifully with fish, adding a touch of elegance to the dish. Serve this delightful steamed fish with your favorite vegetable sides for a complete and satisfying meal.

Instructions

    1.
Place a large saucepan filled with several inches of water over medium-high heat. Bring the water to a rolling boil.
    2.
In the meantime, place the fish on a plate and set the plate inside a steamer basket. Once the water is boiling, carefully place the steamer with the lid on top of the pot. Steam for approximately 8-10 minutes, or until the fish is cooked through and flakes easily when tested with a fork.
    3.
Heat oil in a small saute pan over medium heat until it is hot. Add the julienned ginger and cook until it has browned slightly, about 1-3 minutes. Reduce the heat to low if the ginger begins to brown too quickly. Add the soy sauce, sesame oil, and kosher salt to the ginger mixture. Stir well to combine.
    4.
Immediately top the steamed fish with the freshly chopped cilantro and julienned scallions.
    5.
Pour the hot ginger-soy mixture directly over the fish, cilantro, and scallions. Serve immediately. If desired, garnish with some sliced chilies for an extra kick.
