Instructions

    1.
Preheat an oven to 350 degrees Fahrenheit. Lightly coat an oven-safe baking dish with cooking spray. Prepare the mini sweet peppers by slicing off the tops, halving each pepper lengthwise, and removing the seeds. Arrange the pepper halves in the prepared baking dish.
    2.
In a mixing bowl, whisk together the eggs, salt, pepper, and red pepper flakes until well combined.
    3.
Heat the olive oil in a medium pan over medium heat. Pour the egg mixture into the pan and cook, stirring continuously, until the eggs are scrambled to your preferred level of doneness. Keep in mind that the eggs will continue to cook in the oven, so slightly undercooking them at this stage is recommended.
    4.
Spoon the scrambled eggs evenly into the prepared sweet pepper halves in the baking dish. Cook the bacon strips in the same pan until they are crispy. Once cooked, remove the bacon from the pan and chop it into small bacon bits.
    5.
Sprinkle the chopped bacon bits evenly over the scrambled eggs-filled sweet peppers. Then, sprinkle the shredded cheddar cheese generously on top of the bacon bits.
    6.
Place the baking dish, uncovered, in the preheated oven and bake for approximately 10 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
