Instructions

    Cut into the sausage casings and squeeze the meat into a mixing bowl. Discard the casings.

    Heat the olive oil in a large frying pan over medium-high heat. Divide the sausage meat into two even portions and form into individual burger patties with your hands, about ½ inch thick.

    Add the patties to the hot pan and fry until golden brown on the outside and completely cooked through. Ensure the internal temperature reaches 160°F (71°C). Set aside, leaving any rendered fat in the pan.

    Add the bacon and eggs to the pan with the sausage fat. Cook until the bacon is crisp and the eggs are cooked to your desired doneness. Over-easy is recommended for a runny yolk.
