Description

Imagine starting your day with a warm, comforting dish that satisfies your cravings while keeping things light and wholesome. These savory biscuits and gravy cups offer a delightful twist on a classic breakfast, perfect for any morning or even as a comforting dinner. The base of this recipe features tender, buttery biscuits, each baked to a perfect golden-brown hue.

These aren't your average biscuits; they're crafted to be wonderfully light and airy, providing a delightful contrast to the rich, creamy gravy that awaits. Speaking of gravy, prepare your taste buds for a truly indulgent experience. A luscious, meaty sausage gravy blankets each biscuit, infusing every bite with deep, savory flavors.

The sausage, browned to perfection, adds a wonderful textural element to the smooth, velvety gravy. The gravy is seasoned with a blend of herbs and spices, creating a depth of flavor that will leave you wanting more. What sets this recipe apart is its unique presentation.

Individual portions are created using a muffin tin, making it easy to control portions and enjoy a perfectly sized serving. The biscuit dough is layered, with a generous helping of the creamy sausage gravy nestled in between, ensuring every bite is an explosion of flavor and texture. The biscuits are baked until they reach a beautiful golden and flaky state, creating a visually appealing dish that's as pleasing to the eye as it is to the palate.

These biscuit and gravy cups are incredibly versatile. While ground breakfast sausage is ideal, you can also experiment with other options to suit your preferences. Plain ground pork or Italian sausage (removed from its casing) can be used as a substitute.

For easy preparation, measure the biscuit dough using a 1/4 cup, filling it halfway to achieve the desired 2-tablespoon portions. These biscuit and gravy cups are satisfying on their own, but you can also serve it with a side of eggs, cooked to your liking, for a more substantial breakfast. Whether you're looking for a comforting weekend brunch or a quick and easy weekday meal, these savory biscuit and gravy cups are sure to become a new favorite.

Instructions

    1.
Whisk almond milk, heavy cream, and honey in a bowl until the honey is dissolved. Add dry yeast and the first portion of almond flour. Stir gently and let it sit for 5-10 minutes until the yeast activates and bubbles form.
    2.
In a stand mixer with a dough hook, combine the second portion of almond flour, salt, and garlic powder. Add cubed cold butter and mix until the butter is broken into pea-sized pieces (5+ minutes). Then, mix in the egg yolk, egg, and liquid yeast mixture until a wet batter forms.
    3.
Mix in the third portion of almond flour until a wet, sticky dough forms. Transfer to a clean bowl, cover with plastic wrap, and let ferment in a warm place for at least 1 hour. The dough will moisten and warm, but not rise significantly.
    4.
While the dough ferments, make the sausage gravy. Brown ground pork in a saute pan on high heat, breaking it into crumbles. Reduce heat to low and melt butter. Sprinkle tapioca flour over the pan. Stir and cook over medium heat until the flour turns slightly golden.
    5.
Pour heavy cream, almond milk, and chicken broth into the pan. Stir and simmer until the gravy thickens. Season with salt, pepper, onion powder, garlic powder, mustard powder, caraway seed, and dried thyme. Simmer until the gravy reaches a chowder-like consistency. Let cool and thicken further.
    6.
Preheat oven to 350 degrees. Spray a 12-cup muffin tin liberally. Scoop 2-tablespoon portions of biscuit dough into each tin, pressing down to form flat discs. Bake for 10 minutes. Remove from oven and pour sausage gravy equally over each biscuit.
    7.
Add another 2-tablespoon portion of dough on top of each portion of gravy, leaving it as a 'drop biscuit'. Bake for another 30 minutes, or until the biscuits are deep golden brown. Let cool for 5 minutes before removing and serving. Brush with melted butter, if desired.
