Description

Imagine sinking your teeth into ribs so tender, the meat effortlessly separates from the bone. These oven-braised ribs achieve that perfect state of succulence through a patient, low-and-slow cooking process. The journey begins with searing, a crucial step that creates a rich, flavorful crust on the exterior of the ribs.

This initial browning not only enhances the taste but also seals in the juices, promising a moist and satisfying interior. The deep, caramelized notes from the seared crust provide a delightful contrast to the tender meat within. Once seared to perfection, the ribs are then gently braised in a savory stock.

This slow braising method allows the connective tissues to break down, resulting in a melt-in-your-mouth texture that is simply irresistible. The stock, infused with the rendered flavors of the ribs, becomes a rich and aromatic sauce that further enhances the overall taste experience. A splash of apple cider vinegar brightens the braising liquid, adding a subtle tang that cuts through the richness and adds depth to the flavor profile.

As the ribs braise, they absorb the fragrant essence of fresh herbs. Rosemary and thyme, with their earthy and aromatic qualities, infuse the meat with a complexity that elevates the dish to new heights. The aroma alone is enough to entice, filling your kitchen with the promise of a truly memorable meal.

Each bite offers a symphony of flavors – the savory richness of the meat, the subtle sweetness of the braising liquid, and the herbal notes that dance on your palate. This recipe yields a generous portion, perfect for feeding a hungry family or for enjoying as leftovers. The flavors deepen and meld together even further overnight, making these braised ribs even more delicious the next day.

Serve them with your favorite sides, such as creamy mashed potatoes, roasted vegetables, or a crisp salad, for a complete and satisfying meal. These oven-braised ribs are a testament to the magic of slow cooking, transforming simple ingredients into a culinary masterpiece.

Instructions

    1.
Preheat an oven to 325 F. Heat a dutch oven over medium-high heat until very hot. Add coconut oil. In the meantime, sprinkle ribs all over with salt and black pepper.
    2.
Sear off the ribs, adding them to the pot in a single layer. Cook on each side until nice and browned. Each side will take about 5 minutes or so. Remove to a plate or sheet tray and repeat with the other ribs until they are all seared.
    3.
Add in sliced onion and whole garlic cloves. Cook for 4-5 minutes until browned. Add a pinch of salt and apple cider vinegar. Scraping the pan to release tasty browned bits.
    4.
Add ribs back in and top with stock. Push ribs down in the stock to make sure they are submerged in the liquid. Bring the pot to a boil. Turn off the heat and place the lid on the pot.
    5.
Place dutch oven in the oven and bake until ribs are tender about 2 ½ hours. The ribs should pull gently from the bone, but not fall off completely.
