Description

Imagine sinking your teeth into a delightful blueberry bar, where simplicity meets exquisite flavor. These bars begin with a wonderfully nutty crust, crafted from almond flour, providing a subtly sweet and wholesome foundation. The crust is pressed into the pan, creating a sturdy yet tender base that perfectly complements the juicy blueberry filling to come.

Next, a vibrant and tart blueberry filling is generously spread over the crust. The blueberries, bursting with natural sweetness and a hint of tanginess, transform into a luscious jewel-toned layer as they bake. The filling is perfectly balanced, ensuring that each bite is a harmonious blend of sweet and tart.

The blueberries soften and release their flavorful juices, creating a delightful sauciness that seeps into the almond flour crust, further enhancing its richness. But the magic doesn't stop there! The same almond flour mixture used for the crust is cleverly transformed into a delectable streusel topping.

Crumbled over the blueberry filling, the streusel adds a delightful textural contrast. As the bars bake, the streusel becomes golden brown and wonderfully crisp, adding a touch of buttery goodness and nutty aroma to every bite. The combination of the soft, juicy filling and the crunchy topping creates a symphony of textures that is simply irresistible.

These blueberry bars are incredibly easy to make, making them perfect for a quick dessert or a delightful treat to share with friends and family. The aroma that fills your kitchen as they bake is simply intoxicating, promising a sweet and satisfying experience. Whether enjoyed warm from the oven or cooled to room temperature, these blueberry bars are sure to be a crowd-pleaser.

They're the perfect balance of wholesome ingredients and irresistible flavor, making them a guilt-free indulgence you can enjoy any time of day. So go ahead, treat yourself to a slice of sunshine with these delightful blueberry bars!

Instructions

    1.
Preheat oven to 350°F (175°C). In a mixing bowl, combine melted butter, almond flour, 1/2 cup Swerve confectioners sugar, and 1/4 teaspoon kosher salt.
    2.
Press 2/3 of the crust mixture into the bottom of an 8x8 inch glass pan. Bake for 7 minutes, then remove and let cool on a wire rack.
    3.
In a saucepan, combine blueberries, 1/4 cup Swerve confectioners sugar, xanthan gum, water, and a pinch of kosher salt. Bring to a simmer and cook for about 10 minutes, until the mixture thickens and some blueberries remain intact.
    4.
To the reserved crust mixture, add cinnamon and mix well to create the streusel topping.
    5.
Pour the blueberry filling evenly over the baked crust.
    6.
Sprinkle the streusel topping over the blueberry filling. Bake for 25 minutes, or until the topping is golden brown. Let cool completely before cutting into 18 bars.
