Instructions

    Add the egg and the egg white to a food processor and blend until light and frothy.

    Add the almond meal, almond milk, apple cider vinegar, baking soda and salt to the food processor and blend again until smooth and frothy.

    Coat a large frying pan with a thin layer of olive oil over a medium/high heat. Add a half tablespoon of batter to the pan to create one blini, you may be able to get up to four blinis in the pan at once.

    Cook the blinis for a minute or so on each side until you see air bubbles appear on the surface and they are golden brown all over. Repeat the process until you have used up all the batter.
    5.
    Serve with your choice of topping.
