Description

Bistek Tagalog is a beloved Filipino dish that brings together savory, tangy, and slightly sweet flavors in a comforting and satisfying way. This version allows you to enjoy all the traditional tastes while keeping things wholesome. At its heart, Bistek Tagalog features thinly sliced steak, typically a tender cut like sirloin or ribeye, marinated in a mixture of soy sauce, lemon juice, and freshly cracked black pepper.

This marinade not only infuses the beef with umami and bright citrus notes, but it also helps to tenderize the meat, ensuring a melt-in-your-mouth texture. The magic of Bistek Tagalog truly happens as the marinated steak simmers gently in its own juices, along with the marinade. The sauce reduces and intensifies, creating a rich and flavorful gravy that clings to every strand of beef.

As the steak cooks, it becomes incredibly tender, practically falling apart with each bite. The caramelized onions, a crucial component of this dish, add a touch of sweetness that balances the savory and tangy flavors beautifully. They are cooked low and slow until they reach a deep golden brown, releasing their natural sugars and creating a luscious, jam-like consistency.

The aroma of caramelized onions alone is enough to make your mouth water. Fresh garlic, browned alongside the onions, lends a pungent and aromatic element that complements the other flavors perfectly. The garlic's sharpness mellows as it cooks, adding depth and complexity to the overall taste profile.

The final result is a symphony of flavors and textures: the tender, savory beef, the sweet and soft caramelized onions, the pungent garlic, and the bright, tangy sauce. It's a dish that is both comforting and exciting, familiar yet always satisfying. Bistek Tagalog is traditionally served with rice, but you can pair it with cauliflower rice or other side dishes of your choice to complete the meal.

This recipe is a wonderful way to experience Filipino cuisine and discover new flavors that will quickly become family favorites.

Instructions

    1.
Thinly slice the steak against the grain. Freeze the meat slightly for easier slicing if needed. Marinate the steak in soy sauce, lemon juice, and freshly cracked black pepper. Let it sit while slicing onions or refrigerate overnight. Slice yellow onion into thin julienne slices. Heat avocado oil in a large saute pan over medium-high heat. Add the meat with the marinade.
    2.
Bring the mixture to a boil, then reduce to a simmer. Cover the pan with a lid or baking sheet. Simmer until the meat is tender, about 30 minutes or more depending on the cut. Add water if the pan gets dry. Once tender, remove the meat to a clean bowl.
    3.
Add 1 tbsp of avocado oil to the pan, then add the onion and minced garlic. Saute until lightly caramelized. Add the meat back in and stir well. Taste and adjust seasoning with salt and black pepper.
    4.
Serve immediately with your favorite Keto side dish or cauliflower rice.
