Description

Imagine a hearty, rustic loaf, its aroma hinting at the complex flavors within. This bread offers a satisfying experience for those seeking a low-carbohydrate alternative without sacrificing taste or texture. The infusion of beer lends a unique character to each slice, complementing the nutty notes of almond flour and the subtle earthiness of flaxseed.

The result is a bread that's both flavorful and texturally intriguing. The beer's inherent qualities, whether a light lager or a robust stout, subtly permeate the crumb, offering a depth of flavor that elevates it beyond the ordinary. Small additions of ingredients bind the bread together, creating a sturdy structure that holds its shape beautifully.

The crust develops a lovely golden-brown hue, providing a gentle contrast to the soft, yielding interior. Each bite offers a delightful combination of textures, from the slight chewiness of the crumb to the pleasant pop of whole flaxseeds. Enjoy a slice warm from the oven, spread generously with salted butter, or topped with creamy avocado.

For the best flavor, select a beer with a pronounced character – an IPA or a dark ale will impart a more noticeable taste. Gently warming the beer before incorporating it into the dough helps activate the binding properties, leading to a better rise and a more cohesive crumb structure. Patience is key as the bread slowly transforms in the oven, rising gradually to achieve its full potential.

To ensure a moist and flavorful loaf, proper storage is essential. Wrap the bread tightly in plastic wrap and store it in the refrigerator for up to a week, or slice and freeze it for longer keeping. This bread pairs beautifully with a variety of accompaniments, from simple spreads to more elaborate toppings.

Consider serving it with a flavorful guacamole or alongside a bowl of hearty soup.

Instructions

    1.
Preheat an oven to 350°F (175°C). Spray a standard loaf pan with nonstick cooking spray and set aside. In a stand mixer fitted with a paddle attachment, combine the almond flour, psyllium husk powder, salt, and baking powder. No need to mix thoroughly at this point.
    2.
Heat the beer in a heat-proof measuring cup in the microwave until very hot but not simmering. Add the vinegar to the hot beer. With the mixer on low, slowly add the beer/vinegar mixture to the dry ingredients. Once fully incorporated, increase the mixer speed to medium-high and beat for about 1 minute.
    3.
Add the eggs all at once to the mixture. Mix on medium-high speed until very well incorporated and smooth, about 1-2 minutes. Use a dough scraper to remove the dough from the bowl.
    4.
Shape the dough into a loaf and place it in the prepared loaf pan. Bake for at least 1 hour and 30 minutes. The loaf will rise significantly around the one-hour mark, so be patient. Overbaking is preferable to underbaking to prevent collapse. If the loaf collapses, immediately return it to the oven to allow it to rise again.
    5.
Once baked, allow the loaf to cool slightly before removing it from the pan. Slice into 20 slices with a sharp bread knife. Store in the fridge wrapped tightly in plastic wrap, or freeze for longer storage.
