Description

Imagine a pasta salad that’s both comforting and light, bursting with fresh flavors and satisfying textures. This dish begins with a generous block of feta cheese, nestled amongst sweet, juicy grape tomatoes. A drizzle of rich olive oil, infused with aromatic spices, blankets the ingredients, setting the stage for a culinary transformation in the oven.

As it bakes, the feta softens into a creamy, dreamy sauce, melding with the tomatoes to create a vibrant and flavorful base. The tomatoes burst, releasing their sweet juices, which mingle with the salty feta and herbaceous spices. The aroma alone is enough to entice anyone to the table.

Instead of traditional pasta, this recipe uses noodles made from konjac flour, offering a delightful chewiness that complements the creamy sauce. These noodles, often found in the refrigerated section of grocery stores, are incredibly versatile and readily absorb the flavors of the dish. Their slightly translucent appearance adds a unique visual appeal to the salad.

Once the feta and tomatoes are baked to perfection, simply toss in the cooked noodles, ensuring every strand is coated in the luscious sauce. The result is a harmonious blend of creamy, tangy, and savory flavors, with a hint of sweetness from the roasted tomatoes. Each bite is a textural delight, with the soft feta, juicy tomatoes, and slightly firm noodles creating a symphony of sensations.

This pasta salad can be enjoyed warm, straight from the oven, or chilled for a refreshing twist. It’s a crowd-pleaser that appeals to a wide range of palates, making it perfect for family gatherings, potlucks, or a simple weeknight meal. Whether you're seeking a lighter alternative to traditional pasta dishes or simply craving a burst of fresh, Mediterranean-inspired flavors, this baked feta pasta salad is sure to become a new favorite.

Instructions

    1.
Preheat the oven to 375 degrees. Unwrap a block of feta cheese and place it in the center of a small glass baking dish, leaving the cheese whole. Arrange whole grape tomatoes between the feta cheese and edges of the glass baking dish, making sure to fill any empty glass at the bottom. Next, cut the number of garlic cloves you need from a head of garlic by removing the top of the bulb and slicing the cloves so they remain attached to each other at the bottom. You can remove any loose paper hanging off the garlic cloves, but leave the cloves in their natural wrapping. Wedge the garlic clove into your grape tomatoes.
    2.
Sprinkle salt, pepper, oregano, thyme, and fresh lemon zest across the dish. Drizzle extra virgin olive oil over all the ingredients, making sure to coat the exposed garlic cloves and the tomatoes thoroughly. Cover the dish with aluminum foil and bake in your oven for 40-45 minutes. When done, the feta will still be in a whole piece but will be extremely soft. The tomatoes will have burst and released their liquids, and the garlic will be roasted and soft. Let the dish cool for 5 minutes after baking.
    3.
When the feta has cooled off a little, remove the garlic cloves from the dish using a pair of tongs. Use the tongs to squeeze the warm garlic cloves from their skin (they should slide out easily) and into the dish. Use a pair of forks to break apart the tomatoes, feta cheese, and garlic cloves and mix everything together. Mix thoroughly until you have a warm, creamy, tomato and feta cheese sauce. Drain a bag of shirataki noodles, and prepare them as the packaging directs you to. Most shirataki noodles need to be boiled for 2-3 minutes before being drained again and set aside to cool.
    4.
Add your prepared shirataki noodles to the baked feta sauce (you may need to combine the ingredients together in a larger bowl or dish). Fold the ingredients together before arranging in a serving dish. You may enjoy the pasta salad warm, but it also tastes good as cold leftovers. Chill the pasta salad completely in your refrigerator, and add it as a high-fat side dish to your meal prep containers. Keep the baked feta pasta salad stored in an airtight container in your refrigerator for up to 1 week.
